Keto Stuffing

This one-pan cauliflower stuffing takes 30 minutes and is the perfect veggie stuffed side dish for your holiday meal!

Ingredients

  • 6 cups cauliflower fresh or frozen; riced
  • 2 TB butter
  • 1/2 onion diced
  • 2 stalks celery diced
  • 1 carrot peeled; diced
  • 8 oz mushrooms sliced
  • 2 TB poultry seasoning
  • 2 TB rosemary fresh
  • 2 TB parsley fresh
  • 2 TB Thyme fresh
  • 2 TB sage fresh
  • 1/2 cup chicken broth or more, as needed

Instructions

  • In a large skillet or dutch oven. Add butter. Add onions, celery, and carrot, sauté until softened.
  • Add cauliflower and mushrooms. Cook until tender. About 8 minutes.
  • Add seasoning and fresh herbs. Slow add chicken broth. Cover and simmer on low until tender, and moisture has been absorbed.
  • Serve immediately. Can be frozen.
