Keto Stuffing
This one-pan cauliflower stuffing takes 30 minutes and is the perfect veggie stuffed side dish for your holiday meal!

- 6 cups cauliflower fresh or frozen; riced
- 2 TB butter
- 1/2 onion diced
- 2 stalks celery diced
- 1 carrot peeled; diced
- 8 oz mushrooms sliced
- 2 TB poultry seasoning
- 2 TB rosemary fresh
- 2 TB parsley fresh
- 2 TB Thyme fresh
- 2 TB sage fresh
- 1/2 cup chicken broth or more, as needed
In a large skillet or dutch oven. Add butter. Add onions, celery, and carrot, sauté until softened.
Add cauliflower and mushrooms. Cook until tender. About 8 minutes.
Add seasoning and fresh herbs. Slow add chicken broth. Cover and simmer on low until tender, and moisture has been absorbed.
Serve immediately. Can be frozen.
