Keto Stuffing

So there are a lot of keto stuffing recipes on the Internet that utilize low-carb bread.
You could of course absolutely do that. But CJ and I have been making this recipe for eight years. In fact, CJ was the first preparer of this recipe.
My mom is currently in the Atkins induction phase of her low-carb lifestyle.
And because we will be celebrating Thanksgiving with her, I wanted an option for very low-carb, that did not utilize any keto filler foods like low-carb bread.
There is a meager amount of high fiber carrot in here, that should not be considered alarming.
Remember, there are not “KETO” foods. Ketosis is a dietary and lifestyle approach, not a set of foods.
This recipe freezes well, and we hope you enjoy it as much as we do.

Keto Stuffing
Ingredients
- 6 cups cauliflower fresh or frozen; riced
- 2 TB butter
- 1/2 onion diced
- 2 stalks celery diced
- 1 carrot peeled; diced
- 8 oz mushrooms sliced
- 2 TB poultry seasoning
- 2 TB rosemary fresh
- 2 TB parsley fresh
- 2 TB Thyme fresh
- 2 TB sage fresh
- 1/2 cup chicken broth or more, as needed
Instructions
- In a large skillet or dutch oven. Add butter. Add onions, celery, and carrot, sauté until softened.
- Add cauliflower and mushrooms. Cook until tender. About 8 minutes.
- Add seasoning and fresh herbs. Slow add chicken broth. Cover and simmer on low until tender, and moisture has been absorbed.
- Serve immediately. Can be frozen.
