This chicken bacon artichoke Casserole is total comfort food. It’s easy to make, packed with protein, brimming with spinach and artichoke hearts and full of flavor. Truly an excellent copycat for Papa Murphy’s De-Lite pizza, minus the crust!
It’s packed with moist chicken and tons of vegetables in a delicious creamy, cheesy base. This beautiful complete meal is not lacking in flavor and will have your family asking for seconds.
I grew up in the 80’s, a time when everything was fat-free this and low-fat that and processed foods were a big deal … and cheap.
Now that I’ve returned to a life of healthy saturated fats, I still adore me an easy comfort casserole!
I was always a HUGE fan of Papa Murphy’s de-Lite pizzas and the chicken bacon artichoke pizza was my favorite.
If you love spinach artichoke dip, you are going to love this Casserole. It’s basically chicken topped with a fabulous spinach and artichoke dip mixture and cheese sauce, and of course the all important BACON and baked till brown and bubbly.
Rotisserie chicken: if you don’t want to use rotisserie chicken, you can use any leftover chicken. Just make sure it’s seasoned with salt and pepper.
Mozzarella cheese: if you don’t like or don’t have Mozzarella cheese, you can substitute this with any semi-hard cheese that melts well, such as Colby, or Monterey Jack.
Spinach: Fresh is nice, it will wilt in the oven….you can use frozen if you prefer, but be sure to squeeze it dry after thawing.
Artichokes: Next, break the artichoke hearts into smaller pieces, or chop them. Add the artichoke hearts to the pan with the chicken and spinach. I used marinated, because that is my preference… But they also come frozen. Use whatever you can find and enjoy.

I also have found memories of this pizza from my carb days; it was from Papa Murphys, and I would always make sure to get it several times each year. This casserole brings back lots of fond food memories. I didn’t grow up eating artichokes and had never had them until I was exposed to this pizza. They add a nice richness and a little tang to each bite, but it’s not overwhelming. I would encourage you to try it. Rotisserie chickens, we always get comments about why the rotisserie chickens aren’t great for us on Keto and we say to each his own, it’s your responsibility to manage how you do Keto. We only tell you what has worked for us. But for recipes like this the ease of a rotisserie chicken makes getting this on the table in 30 minutes doable. Enjoy!

chicken bacon artichoke casserole
- 4 cups chicken cooked; chopped
- 2 cups spinach fresh
- 12 oz artichoke hearts regular or marinated
- 2 cups mozzerella cheese or Italian blend
- 1/2 cup bacon crumbled; cooked
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 cloves garlic fresh; minced
- 1/4 cup parmesan grated
- 2 TB Italian blend seasoning Johnny's
- salt and pepper add to taste
- Preheat oven to 375 degrees.
- In a 9x13 inch baking dish combine chicken, spinach, bacon, and artichoke hearts. Stir to combine.
- In a separate bowl, combine remaining ingredients except cheese. mix well to combine.
- Pour sauce over casserole mixing well. Add half the cheese. Stir in. Add remaining cheese to cover surface.
- Bake 20 to 25 minutes until heated through and bubbly. Broil top if desired. Let stand 15 minutes before serving.
