Low-Carb Unicorn Cheesecake(Triple Citrus Cheesecake)

- 24 oz cream cheese softened; divided
- 3 sugar-free jello lemon, lime, orange(0.03 oz)
- 3 cup heavy cream divided
- 3 TB zest lemon, lime, orange
Shortbread Crust:
- 1.5 cup almond flour
- 3 TB butter melted
- 1 TB brown natural sweetener optional
Shortbread crust:
Preheat the oven to 350 degrees. Combine crust ingredients. Press into a springform pan, or 8x8 baking dish.
Cook 8 minutes. Let cool thoroughly. Set aside.
Cheesecake batter:
In three separate mixing bowls, combine cream cheese, heavy cream, zest, and individual packets of jello to each bowl.
Whip with hand mixer, until each batch is light and fluffy.
Starting with cooled crust, spread lime layer evenly over crust.
Add lemon layer, spreading evenly. Lastly, top with orange layer.
Cover, and refrigerate at least 2 hours, or overnight.
