Low-Carb Unicorn Cheesecake
Triple citrus cheesecake is classic no-bake style cheesecake, infused with the tangy flavors of lemon, lime, and orange. It is made easy to share with a crowd.
In our family, we call this, unicorn cheesecake. Firstly, well…..it’s unique, like a unicorn. Also, our middle daughter requested keto cheesecake for her birthday 5 years ago, and she adored unicorns.
Cheesecakes are popular year ’round, but nothing sets the special Holiday tone quite like serving a thick and creamy slice for dessert.
Sure, gorgeous cheesecakes in all shapes, sizes, and flavors can be purchased at bakeries and warehouse clubs across the land, but in my experience, those store bought varieties are more focused on the toppings than the flavor of the cheesecake all by itself.
Additionally, those creations are generally NOT sugar-free.
This tangy triple-citrus cheesecake has three layers of citrus-flavored batter poured on top of the other.
This separation of flavors makes it easy to taste each flavored lime, orange, and lemon layer. Citrus lovers, this is your cheesecake!
The three flavors in this cheesecake are easy to make. Even though it is three separate batters, none of them are difficult.
You could make this in any flavor creation your imagination can dream up!

Low-Carb Unicorn Cheesecake(Triple Citrus Cheesecake)
Ingredients
- 24 oz cream cheese softened; divided
- 3 sugar-free jello lemon, lime, orange(0.03 oz)
- 3 cup heavy cream divided
- 3 TB zest lemon, lime, orange
Shortbread Crust:
- 1.5 cup almond flour
- 3 TB butter melted
- 1 TB brown natural sweetener optional
Instructions
Shortbread crust:
- Preheat the oven to 350 degrees. Combine crust ingredients. Press into a springform pan, or 8x8 baking dish.
- Cook 8 minutes. Let cool thoroughly. Set aside.
Cheesecake batter:
- In three separate mixing bowls, combine cream cheese, heavy cream, zest, and individual packets of jello to each bowl.
- Whip with hand mixer, until each batch is light and fluffy.
- Starting with cooled crust, spread lime layer evenly over crust.
- Add lemon layer, spreading evenly. Lastly, top with orange layer.
- Cover, and refrigerate at least 2 hours, or overnight.
