This delicious and easy to make bars are nice refreshing keto low carb friendly snack. Great with coffee, and really good as a breakfast bar. The recipe is very versatile and you could substitute blueberries for another low carb friendly berry.
1/2cupBrown Sugar Natural Sweetener Sukrin Gold or Swerve
6TBbutter melted
1tspbutter extractalmond, or vanilla
Instructions
Preheat oven to 350°
In a large saucepan heat blueberries and water to low boil.
Cook ten minutes. Slightly mash berries. Remove from heat. Add sweetener, sprinkle evenly with xanthan gum stir well. Let cool.
In a large bowl, combine dry ingredients, hand shifting to incorporate ingredients. Add butter and extract and mix to form dough.
In a 7x11 inch pan, fitted with overlapping parchment paper lightly greased, press down half of crumble mixture. Bake for 10 minutes or until lightly golden. Let cool 10 minutes.
Spread cooled blueberries onto bottom crust. Top with remaining crumble mixture and lightly press down. Bake for 20 to 25 minutes or until lightly browned. Let cool. Cut into bars and serve.
