Keto Creamy Chicken Florentine Casserole
Servings 10 people
- 3 lbs. chicken chopped and cooked thighs
- 2/3 cup bacon crumbles or 4 slices
- 4 oz. chopped mushrooms sautéed
- 10 oz. spinach well drained
- 2 TB butter
- 4 oz. cream cheese softened
- 2/3 cup heavy cream
- 1/2 cup Parmesan cheese grated
- 1/2 cup chicken stock
- Italian seasoning to taste
- 2 cups mozzarella cheese
Preheat oven to 400°
In a 9x13 inch baking dish combine chicken, warmed bacon crumbles and sautéed mushrooms. Crumble spinach in dish.
In a separate saucepan combine softened cream cheese and butter until melted, whisking often. Add heavy cream whisking until incorporated. Add Parmesan cheese whisking well. Add seasonings. Whisk in chicken stock. Remove from heat.
Stir sauce into meats, mushrooms, and spinach. Add 1/2 mozzarella cheese and combine well. Top with remaining cheese. Bake 20 minutes. Broil additional 1 to 2 minutes if desired. Serves 10 to 12.
