This weeks recipe is a Keto Creamy Chicken Florentine Casserole.  We hadn’t done a casserole in awhile so when we came across this originally non Keto recipe, we thought it would be easy to modify and make a delicious, easy to make, elegant casserole.

The self-appointed casserole queen strikes again!

This creamy chicken Florentine casserole is pure comfort food. Perfect for days when you crave a good warm meal. It takes about 30 minutes, has few ingredients and the creamy sauce mixed with spinach will have your entire family raving about it.

The chicken Florentine sauce is simple but it is rich and creamy with herbs and delicious cheese.
This tasty recipe will definitely become a part of your dinner rotation after trying it once.

This recipe is simple enough for weekdays, but it would also be elegant enough for a dinner party.

If you’re looking for a new way to jazz up the same old boring chicken and get out of your dinner rut, then this easy recipe is just the ticket. Family dinners just got a lot easier!

According to legend, the name originates with a French queen named Catherine de Medicis , who was born in Florence and in 1533, married A French king, becoming the queen of France… She imported her own cooks from Florence and even brought along spinach seeds to grow. Catherine Cook’s served so many dishes with spinach that this style became known as spinach a la Florentine to denote the origin of the vegetable and then it was eventually simplified to just Florentine. This dish is both elegant and rich, perfect for a queen LOL.

So if your usual chicken routine is starting to feel a little ho-hum on your low-carb lifestyle this simple recipe is sure to shake things up. This recipe doesn’t hold back on the cheesy cream sauce, but it also has vegetables and meat to satisfy hearty family appetites.

TIPS FOR CHICKEN FLORENTINE:

I used frozen spinach in this dish, as I find the flavor and texture is a lot more fine for my purposes. That being said, if you prefer to use fresh that will work, whatever you have on hand.

This recipe would also utilize a rotisserie chicken, chicken breasts, or even pork chops if you preferred.

You can add other ingredients to this dish to make it your own. Tomatoes, artichoke hearts, diced red onion, or sliced zucchini would also be delicious here.

I used dry herbs due to time, but using fresh Italian herbs would be amazing.

Use mashed potatoes or pasta for non-keto family members. However you serve it, this classic recipe is sure to be a hit!

Well this recipe was really simple and we love that about it.  Just like all casseroles this was better the next day, I only need to add a bit more salt but of course that is a personal preference.  I really enjoyed this dish and it was supper easy to make.

Keto Creamy Chicken Florentine Casserole

Ingredients

  • 3 lbs. chicken chopped and cooked thighs
  • 2/3 cup bacon crumbles or 4 slices
  • 4 oz. chopped mushrooms sautéed
  • 10 oz. spinach well drained

Sauce Ingredients

  • 2 TB butter
  • 4 oz. cream cheese softened
  • 2/3 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup chicken stock
  • Italian seasoning to taste
  • 2 cups mozzarella cheese

Instructions

  • Preheat oven to 400°
  • In a 9x13 inch baking dish combine chicken, warmed bacon crumbles and sautéed mushrooms. Crumble spinach in dish.
  • In a separate saucepan combine softened cream cheese and butter until melted, whisking often. Add heavy cream whisking until incorporated. Add Parmesan cheese whisking well. Add seasonings. Whisk in chicken stock. Remove from heat.
  • Stir sauce into meats, mushrooms, and spinach. Add 1/2 mozzarella cheese and combine well. Top with remaining cheese. Bake 20 minutes. Broil additional 1 to 2 minutes if desired. Serves 10 to 12.
