12white button mushroomsor baby portobellos mushrooms with stems removed
4ozcream cheese softened
1/2cupParmesan cheesegrated
4ozSwiss cheese
2/3cupbacon crumblesrewarmed in bacon drippings (equivalent to 10 slices of cooked bacon)
3clovesgarlicuse 1 - 3 based on your personal taste
Italian seasoning to taste
2TBfresh chopped parsley
Drizzle of avocado oil
Instructions
Place cleaned de-stemmed mushrooms, cap side up in a 9x12 baking dish.
Drizzle with avocado oil. Combine cheeses and seasoning in a small bowl. Add chopped garlic and parsley. Add cooled bacon crumbles, stirring well to combine.
Stuff caps of mushrooms generously. Sprinkle any remaining mixture throughout dish.. Bake at 375° For 15 minutes. Broil 1 to 2 minutes to crisp and brown tops. Let sit 5 minutes and serve. Can be refrigerated for up to 4 days.
