Here is a delicious recipe that we are calling a 90 Second Bread Chicken Melt. The recipe for 90 Second Bread is all over the internet, it is a quick and easy keto and low carb friendly bread recipe, for when you just feel like having bread while doing Keto. The recipe make two slices of bread, we suggest toasting your bread after you make it just to add some extra crunch and texture.
Preparing Your Chicken Salad
- Use 1 can of 12.5 Oz canned Chicken (we used the Kirkland canned chicken from Costco but you can use any brand, or you could also use canned tuna.
- Use 1/2 cup of mayonnaise
- Use 3 chopped green onions
- 1/4 of a cup of chopped banana pepper rings (Optional)
- Mustard to taste.
Mix all of your ingredients together, salt and pepper if you wish or do so later, set your chicken salad aside.
Ingredients for your 90 Second Bread
- 3 TBLSP of Almond Flour (blanched)
- 1 Egg
- 1/2 TSP Baking Powder
- 1 1/2 TBLSP of Butter
In a small dish (square or round) mix your ingredients. *We like to whip our eggs before mixing in the other ingredients this helps make your bread a little bit fluffy.
Microwave for 90 seconds. Remove from the microwave it should be cooked and easily come out of your dish (it will be really hot!). Take a serrated knife and cut the bread in half for two slices. To make your slices a little firmer we suggest toasting them.
After toasting, add your chicken salad, top with a slice of cheese and enjoy!
