Keto Greek Salad (Cauliflower Greek Salad)

For the Salad:
12 to 16 oz. riced cauliflower(bagged is great)
1/2 cup diced cucumber (I used English, peel if using regular)
1/4 cup chopped red onion
1/2 a red bell pepper(or color of choice) chopped
2TB chopped parsley
1/2 cup Kalamata olives chopped or halved
1 small container feta cheese crumbles

For the Dressing:
2 TB extra virgin olive oil
1/3 cup red wine vinegar
1tsp sweetener ( I used liquid Splenda)
1 tsp mustard (Dijon, yellow, or whole grain)
1/2 tsp salt
1/2 tsp pepper
1 Tsp dried oregano
1tsp dried basil

Rice(Or open the bag :)) the cauliflower in a medium serving bowl. Whisk together all of the dressing ingredients. Chop the veggies and olives. Combine into the cauliflower. Pour the dressing over and toss to coat. Add the feta cheese. Serve immediately, or chill in the fridge.
