Switch up your regular breakfast tacos with these lovely, super speedy smash sausage breakfast tacos. Just press sausage meat onto a tortilla, pan-fry and top with creamy scrambled eggs and melty cheese. A drizzle of taco sauce finishes things off perfectly. Great for feeding a crowd.

It’s super handy using breakfast sausage, because it’s already pre seasoned and ready to spread!

While I’ve called these breakfast tacos, they can absolutely be enjoyed at any time of the day. 

They’re also brilliant if you’re hosting brunch or cooking for a crowd. 

 

The elements can be prepared in advance and then cooked when you’re ready – and you can even cook them on an outdoor grill, barbecue or Blackstone to make things SUPER quick!

The best part about this recipe is that it comes together in under 30 minutes. 

Whip up a batch for a unique weekday breakfast, or enjoy them on the patio on a lazy Saturday. Either way, these Easy Breakfast Tacos are crowd-pleasers that will leave everyone wanting more. So many possibilities for variation, give them a try!

Breakfast Smash Taco

A fast and fabulous breakfast taco for meal prep and easy on the go breakfast

Ingredients

  • 1 lb breakfast sausage any kind
  • 8 eggs
  • 8 low carb tortillas taco size
  • 1 cup cheese shredded; any kind
  • 1/2 cup vegetables optional

Instructions

  • Spread sausage. evenly in a very thin layer over your tortilla all the way to the edges
    Heat a griddle, or non-stick skillet with oil. Place tortilla, meat side down. Allow to cook undisturbed for 3 minutes
    Flip tortilla. Warming meatless side for 30 seconds. Remove to a plate. Garnish with cheese, eggs, and other toppings of choice. Fold in half. Eat immediately.
