Keto Chicken Fajitas Casserole
This weeks recipe is Keto Chicken Fajitas Casserole. This recipe is super simple, with only 7 ingredients and can be made in about 1 hour. This would be a great weeknight family friendly Keto recipe.
So this recipe is easy to make and pretty versatile, although we made this with chicken you could easily substitute the chicken with steak, pork or shrimp. This dish is all about great flavors, and convenience. It’s also about giving you a one pot dish that the entire family might be able to enjoy Keto or not. We’ve all probably been to a Mexican restaurant and seen the sizzling plate of fajitas been delivered to a table, the sizzle alone makes the dish appealing, so this casserole is a easy one pan take on fajitas.
Why Make a Casserole:
Casseroles are super convenient and the idea has been around for a long time. The idea behind a cassorole is ease, and convenence. Casseroles are one dish recipes which general consist of meat, various chopped vegetables and often some type of starchy binder (such as flour, rice, potatoes or pasta–THESE TYPES OF BINDERS AREN’T KETO FRIENDLY!) , and they are generally topped with cheese. So the concept of a casserole is actually a good one. And we often try and take previously high carbs casseroles and make them keto friendly. This recipe for example was originally from Betty Crocker and included minute rice, which we substituted with riced cauliflower.

Keto Chicken Fajitas Casserole
Ingredients
- 2 lbs chicken thighs 6 or 7 cubed, and cooked
- 1 red pepper Medium size or pepper of choice
- 1/2 Onion Medium or one small onion, sliced
- 1 cup riced cauliflower (Optional)
- 1/3 cup Fajita Seasoning Or you could subsitute with taco seasoning
- 8 oz. Cream Cheese softened
- 1/3 cup Sour Cream
- 3 tbsp chicken broth to thin
- 8 oz. Mexican blend cheese Shredded
Instructions
- Bake at 350 degrees for 30 to 40 min. depending on oven temperature. Remove, and let stand 10 minutes before serving.
- Prepare chicken, sauté pepper and onion in oil of choice, or butter, until lightly browned.
- Add riced cauliflower, cook covered, to soften, adding broth as necessary to assist process.
- Add cooked chicken. Stir in sour cream, cream cheese, and seasonings, combine thoroughly.
- Add cheese, mix well.
- Add your casserole filling into a Turn into an 11x9 inch baking dish. Smooth down your casserole.
- Bake at 350 degrees for 30 to 40 min. depending on oven temperature.
