This weeks recipe is a Keto Magic Cookies!  These little mini cookies are simple to make and delicious.  With minimal ingredients need and minimal baking time.  These are sure to cure your sweet tooth.

So magic can be a tricky thing….. Magicians may pull a rabbit from an empty hat, make some things seem to disappear, Or transform a red silk handkerchief into a green silk one.

So what makes these cookies “magical”….the lack of flour, was the original reason.

Coconut dream bars. Magic cookie bars. Hello Dolly bars. You’ve probably seen these classic treats at bake sales, holiday parties, and potlucks over the years, or maybe they were popular in your family traditions.  But originally, they tend to crumble when cut, thanks to a thin graham cracker crust, and topped with gobs of super-sweetened coconut, sweetened condensed milk and chocolate chips, they had a cloying bite that tended to be too much for even the sweetest tooth!

This version starts with a simpler set of keto friendly ingredients. It’s baked with eggs, a bit of coconut oil, and some butter, which makes it pleasantly dense and chewy. It also means it holds up nicely to the toppings.

The end result is a just right sweet and delicious cookie… made bite-sized in my version,  that’s almost impossible to stop at just one. This recipe is also perfect if you need a simple dessert to throw together when you’re short on time.

Now, quite honestly I struggled with these. My original reference was a classic food site, the directions were not thoroughly clear, and I ended up with, runny, spreading globs of goo…. Thankfully, this doesn’t need to happen to you because I have perfected the ideal circumstances for the perfect bite sized chewy nuggets of goodness.

ESSENTIAL TIPS FOR SUCCESS:

So even if you see those delightful golden plump cookies when googling images of keto magic cookies, it’s very difficult to get these cookies to hold their shape without some kind of molding vessel. Most cookies you see have been cut and doctored….”sleight- of hand”, if I may use a magic term. Lol.

Using a muffin tin, silicone mold, or baking dish is essential with these cookies in achieving a solid moldable cookie. These do not do well at all made in traditional cookie form.

Next, using only a small amount of coconut oil, assures that there is not excessive oil runoff.

You want high-quality tasting, oven roasted nuts, smooth sugar free chips, and fresh unsweetened coconut, since you will be tasting all of these ingredients front and center. but absolutely feel free to use different nuts, chopped milk chocolate, or any other type of yummy sugar free sweet in these magical keto cookies. Whatever your family enjoys.

It is absolutely essential, no CRITICAL that these cookies be allowed to cool at room temperature before attempting to cut or remove them.
At least 30 to 45 minutes should be allotted for this process.

Following these tips will ensure you have a “magical” experience making these treats.

Well this recipe was great, but certainly a challenge to perfect.  I applaud Sarah for her persistence in trying to perfect this recipe.  I personally am not a big coconut fan.  But the combination of the chocolate chips, and pecans make these a delicious little bite full and I don’t mind the coconut.  They remind me of little Almond Joy bars.  It’s hard to not eat too many of these, so be warned.  We hope you enjoy these easy to make cookies.

Keto Magic Cookies

These little mini cookies are simple to make and delicious.  With minimal ingredients need and minimal baking time.  These are sure to cure your sweet tooth.

  • Preheat oven to 350F, and place a silicone mini muffin tin on a large baking sheet.
  • In a large bowl stir coconut oil, butter, sweetener, vanilla extract,and egg yolks. Beat briefly until combined. Mix in chocolate chips, coconut, and nuts.
  • I used a small spoon and got 24 cookies in my mold, or you can use an 8x8 baking dish.
  • Bake 12-14 minutes until light golden brown. Do not remove these for at minimum 30 minutes. They need to thoroughly cool before removing or slicing.

Each cookie was a Tablespoon size = 15 grams or o.52 oz
TOTAL CARBS = 2 Per Cookie
NET CARBS = 1 Per Cookie
*Seriously you will probably eat more than 1, but the MACROS are calculated that this recipe makes 24 cookies the way we prepared them.

    Just made these again today they are cooling as I wright this. First time I made them I used an 8×8 square dish as I didn’t have the silicone little muffin pan they came out great 👍. Now I have the silicone muffin pan they look really good. Also I think it helps with portion control!😛 Can’t wait to have one. Thanks Sara for the recipe they are delicious 😋

    These turned out great!! Midway through cooking I realized I only had about 1/3 cup walnuts. I topped off the cup with some macadamias and pepitas. Yum! I love that they are not too sweet.
