Keto Reuben Casserole
This weeks recipe is a Keto Reuben Casserole. This a delicious keto low carb tribute to the classic Reuben Sandwich but with far less carbs. This is a mild tasting casserole made with Corn Beef, Sauerkraut and caraway seeds to give it that authentic Reuben Sandwich taste. Great for St. Patricks day, but truly great for anytime.
There’s nothing like a great Reuben sandwich, all year round, and especially on St. Patrick’s Day! Delicious melted Swiss cheese paired with tangy sauerkraut and the flavor of good corned beef in between layers of Rye bread. But what do you do when you no longer eat bread? A casserole of course! And my specialty here at cjsketokitchen 💗
I’ve come up with a simple and delicious way to create the exact same delicious flavors while sparing the heavy carb combo.
The Ruben is truly a classic… And for good reason. The usual components are corned beef, Swiss cheese, sauerkraut, and Russian or thousand Island dressing. The original sandwich is said to have been created back in the early 1900s.
As we are heading into March, I really enjoy trying to use something that could be made for a classic St. Patrick’s Day meal, and in this case it’s corned beef. Last year I made cabbage rolls ( check out the recipe here on our blog!) Corned beef and cabbage or classic St. Patrick’s day foods. At least here in the United States, and may be considered a more typically Irish-American dish, (I am both….my father’s grandmother was Irish ;)) But nonetheless, it’s fun to have options.
The original Reuben sandwich has been classically associated with kosher style delicatessens… Although it’s not kosher, because it contains both meat and cheese.
So there are a couple of things that really make this casserole taste so close to the real sandwich. First of all the addition of caraway seeds, to mimic the flavor of the Rye bread… Or maybe it’s the homemade thousand Island dressing. It really stands out here. And definitely save some of the thousand Islands to drizzle over your individual serving, it’s that good, you’ll want more than what’s already in the casserole.
Corned beef comes both in canned, and fresh varieties. I used fresh, and cooked in my slow cooker before shredding.. very easy and it turned out moist and flavorful.
Feel free to use steamed cabbage if you don’t care for sauerkraut. Although it doesn’t strongly overpower this dish in my opinion.

This recipe was surprisingly delicious. I say surprising because I was concerned about the use of the sauerkraut, and that it would overpower everything and it DID NOT! In fact the sauerkraut added a nice flavor component, it was very mild. My only issue with the casserole was that we needed to added more caraway seeds, and that was surprising because I saw how much Sarah added. But if you really want to capture the rye bread taste we found that we needed more caraway, and we added them to our individual portions. I am not Irish, but this was delicious. I also really didn’t remember what Corn Beef tasted like and I’d never seen it freshly prepared; that tasted great as well and I love how Sarah prepared it in the crockpot as she slept during the day. - 9 x 13 baking dish

Thousand Island Dressing Ingredients
- 3/4 cup mayonnaise
- 2 TB no sugar ketchup
- 1 TB white vinegar
- 2 dill pickles or equivalent relish (not sweet relish)
- Smoked paprika optional
- 1 squirt Liquid Natural Sweetener Optional
Casserole Ingredients
- 1 LB cooked chopped corned beef
- 1 cup sauerkraut well drained
- 6 slices Swiss cheese 6oz
- Caraway seeds To Taste optional

Preparation
Thousand Island Dressing Preparation
- Combine dressing ingredients in jar or food processor. Set aside.
Casserole Assembly Preparation
- Place corned beef in the bottom of a 9x13 baking dish. Sprinkle with sauerkraut. Drizzle with half of thousand island dressing. Sprinkle caraway seeds evenly over the top. Cover with Swiss cheese. Bake at 350° For 20 minutes. Broil one to two additional minutes for browning. Let stand 15 minutes. Serve with remaining dressing.
