Keto Orange Cranberry Muffins at Cjsketokitchen! Fall is officially here! At least it is here in the Pacific Northwest, last night we hit 30 degrees. When the temperature drops its a signal that fall and the holiday season is fast approaching, and with that comes many of the familiar holiday flavors that we enjoy. One such flavor is cranberries and depending on where you live it’s often hard to find them outside of the holiday season. That’s why we bring you this recipe, to help you take advantage of the holidays and many of the seasonal items. I think these should be called Keto Orange Cranberry Blender Muffins, because most of the prep can be done in your blender, quick, easy with not fuss. We hope that you enjoy it!
Cranberry is an underrated fall flavor! Lost in all the pumpkin, cinnamon, and apple flooding kitchens in the autumn. These muffins have an abundance of cranberries in every soft, buttery bite. Paired with a bright zest of orange …Flavorful and moist, these cranberry orange muffins are heavy on flavor and bursting with cranberries in each bite. Orange and cranberry are a match made in heaven. We have a wonderful orange cranberry cheesecake from our seasonal series last year that I made for the holidays that was adored by all.
These are simple to make. There’s nothing fancy, nothing difficult about them. Just a few basic ingredients to make one fabulous muffin. These muffins are bursting with cranberries so that there are zesty cranberries in each bite. And combined with the fresh orange zest, the taste is outstanding! I think oranges bring out the best in cranberries!
These muffins are not as tooth-achingly sweet as the Starbucks or McDonald’s ones. They contain much more cranberries and are made with real orange flavor. And the best part is they are made fresh by you, with no preservatives or unnecessary starches and sugars.
We are often asked to describe the texture of the items we make…The texture of these cranberry orange muffins is moist, soft and fluffy. The taste is bold and vibrant with bursts of tart cranberries and speckles of orange zest throughout the muffin. These muffins also make a great afternoon snack, especially when you need a little pick-me-up. There is just something about the flavor of oranges and cranberries that really perk you up. And they go great as a partner to coffee or tea.
The star of the show is obviously the cranberries. You may use fresh or frozen (no need to thaw)…. Cranberries are seasonal, and can be impossible to find after the new year, so stock up now to make these muffins all year long! Speaking of cranberry….
- Fresh cranberries are very low in carbs and high in fiber.
- They are full of phytonutrients and antioxidants they are anti-inflammatory.
- Cranberries are an excellent source of vitamin C
- Beware of dried cranberries as they are usually full of added sugars.
Let’s talk about silicone!
I simply adore cooking with silicone. Talk about easy clean up! I highly recommend investing in some silicone muffin liners. They are very economical and long lasting. So much more of your muffin is salvaged in the removal process, than when you use a paper liner. Also much greener, as there is no paper waste!
One final tip….
Definitely consider using LorAnn’s orange oil. It is a pure, natural essential oil and it’s bright and refreshing with a true citrus scent and flavor.
It is 100% pure botanical oil, food grade, cold-pressed, and gluten-free… They also do a wonderful job quality testing their products. I highly recommend their oils.

These little muffins were great while they lasted, and they lasted several days. You really do only need one because they are very filling. I noticed the second day that it could benefit from 10-15 seconds in the microwave. Our version wasn’t very sweet, and of course that is up to your personal taste. I had no complaints about these muffins, I love cranberries so it was a nice combination of sweet and sour as I enjoyed the muffin. The cranberries do get soft as they bake in the oven. I enjoyed these, I can envision someone using these during the holidays. Although who knows what that will look like this year. Have fun with the recipe, and make it your own. Keto Orange Cranberry Muffins
- Preheat oven to 325F and line a 12 serving muffin tin with parchment or silicone liners.
- Combine sour cream, eggs, and orange extract in a large blender jar .Add orange zest. Blend about 30 seconds.
- Add the almond flour, sweetener, and baking powder. Blend again until smooth, about 30 seconds to a minute. If your batter is overly thick, add 1/4 to 1/2 cup of water to thin it out (different brands of almond flour can vary).
- By hand, stir in cranberries, keeping a few for the top of the muffins. Divide the mixture among the prepared muffin cups and bake 25 to 35 minutes, until just golden brown and firm to the touch.
- Remove and let cool completely.
