Keto Taco Stuffed Pepper Casserole-Quick, Easy, a Family Favorite!
This taco stuffed pepper casserole is a quick and easy meal, perfect for any night of the week! Deconstructed stuffed peppers, flavored with bold taco seasoning, topped with ooey-gooey cheese.
Combing stuffed peppers (deconstructed in this case) with all the flavors of the traditional taco and then topping it with melty cheese has to be one of my greatest ideas yet!
I also love this dish because it’s so easy to make and comes together in under 45 minutes.
One of the best things about this easy casserole is that it lets you enjoy all the flavors of taco stuffed peppers without the trouble of actually stuffing any peppers. We have made stuffed peppers on our channel in the past, and on our own for family dinners… But realistically preparing the peppers can be quite a hassle sometimes. You’re looking for sturdy enough to hold the ingredients yet soft enough to actually cut into and eat. This cuts all of that out but leaves all of the savory flavors you’re looking for.
It’s cheesy and meaty with a zesty flavor from our homemade taco seasoning… This casserole has just the right balance of ground beef peppers and cheese. Our whole family scarfed this down……hardly any left for next day….
Traditionally rice is used in stuffed peppers, but just a small amount of riced cauliflower gave it texture and body.
A few thoughts:
MEAT:
This recipe uses ground beef with homemade taco seasoning… But ground chicken, ground turkey, or shredded rotisserie chicken would taste great too!
VEGGIES:
Fresh bell pepper(I used a bit of each color), onion, and tomatoes are loaded into this casserole. But feel free to add jalapeños, cilantro, extra cauliflower or whatever veggies you enjoy to stretch this dish even further.
CHEESE:
I topped our casserole with Tex-Mex cheese blend, but swapping with cheddar or Monterey Jack, or even pepper jack for an extra kick would be excellent here.

This recipe was surprisingly delicious! Although I’m not sure why I was surprised, Sarah makes great food. This was not a Keto recipe originally, she converted it to give everyone more options for success. Our kids loved, loved, loved it! Keto Taco Stuffed Pepper Casserole
Equipment
- 9 x 13 baking dish
Ingredients

- 2 lbs. Ground beef or meat of choice
- 1/8 onion use a small onion, finely diced
- 1 1/2 bell peppers Finely diced; I used a combo of red, yellow & orange
- 2 TB taco seasoning Use our homemade or a very low carb taco seasoning; Season to taste
- 1/4 cup water
- 14 oz diced tomatoes *Must be drained! We used fire roasted
- 1 cup riced cauliflower
- 2 cups Mexican cheese blend or cheese of choice

- Preheat oven to 375°
- Brown ground beef, over medium heat until no pink remains, drain any extra fat.
- Add onion, riced cauliflower and pepper and sauté until softened.
- Add taco seasoning and water and stir to combine and simmer until most of the water has evaporated about three minutes.
- Combine all remaining ingredients in a 9 x 13“ pan. Bake 30 to 35 minutes or until tender golden and bubbly. Broil the top if desired for extra color.
- Rest 10 to 15 minutes before serving
