Keto Pigs In A Blanket | Fat Head Dough

This week we bring you another easy to make, delicious Keto take on an American Classic.  This Week we bring you a Keto Low Carb version of Pigs in A Blanket.  This recipe is all over Pinterest the base of the recipe came from the lowcarbmaven.com.   We modified the recipe a bit, we suggest adding salt and spices to your Fat Head dough mixture this gives it a bit of flavor.  We also topped ours with Everything But the Bagel seasoning from Trader Joe’s although you can also purchase this on Amazon (we’ve included a link below).

Ingredients

  • 1 pound of hot dogs (8) *we suggest you find the lowest carb hot dog you can.
  • 1  Large Egg
  • 1 1/2 cups of Mozzarella cheese (5 ounces)
  • 2 oz of softened cream cheese *We suggest the Philadelphia brand it is lower in carbs
  • 1 1/4 cups of almond flour
  • *2 Tablespoons of unflavored whey protein (We used IsoPure)

Instructions

  1. Place rack to the middle position of the oven. Line a cookie sheet with parchment paper. Beat the extra egg with water for the egg wash.
  2. Add the mozzarella cheese to a medium microwaveable bowl. Cut the cream cheese into small pieces and add to the mozzarella cheese. Microwave for 1 1/2 minutes.  Stir. If the cheese hasn’t melted, cook for an additional 20-30 seconds more.
  3. Add the mozzarella cheese to a medium microwaveable bowl. Cut the cream cheese into small pieces and add to the mozzarella cheese. Microwave for 1 1/2 minutes.  Stir. If the cheese hasn’t melted, cook for an additional 20-30 seconds more.
  4. Mix your dough either by hand or using a food processor (we used our hands).  Add the dry ingredients and process into a very sticky dough. PREHEAT OVEN TO 400 F.
  5. Roll your dough out and divide the dough into 8 equal portions . Working with one ball of dough at a time, fashion your dough around your hot dog, leaving the ends of your hot dogs out.  Place each rolled hot dog on the parchment paper lined cookie sheet.

Topping

  1. Making your egg wash by using 1 large egg and mixing with 2 teaspoons of water.
  2. Dip a pastry brush into the egg wash and brush the surface of each bagel dog – don’t forget the sides.
  3. Sprinkle with the Everything But the Bagel seasoning or Sesame Seeds to add a nice looking texture.

Bake for 10-15 minutes or until browned.
