Low Carb Creamy Dill Cucumber Salad

This weeks recipe is a Creamy Dill Cucumber Salad , this is a low carb keto friendly recipe that only takes 10 minutes to make, and is really cool and refreshing for a hot summer day.  This part of our 4 week summer salads series.  We absolutely loved this recipe and we are sure your family will as well.

Often the most simple recipes are the best and this one is certainly not an exception to the rule.  Homemade cucumber salad is a refreshing companion to any main dish, be it meat or fish, which is especially popular in summer.

There are many versions of this salad around the world, Israelis and Greeks also have popular versions of this salad in their cuisines.  Creamy German Cucumber Salad, or Gurkensalat, is a fresh and simple side dish featuring thinly sliced cucumbers in a sour cream and dill dressing.

We made this while on vacation in Hawaii, and paired it with a rotisserie chicken, it was delicious.    It took us longer to make this because of all of the video stuff we do for YouTube, but you probably could make this in about 10-15 minutes.    This salad will get better the longer it has to chill after you prepare it.  Unfortunately we ended up throw most of ours away because we were leaving our AirBnB the next morning and couldn’t finish it all.

Lets Talk About Yogurt and Carbs:

So before you get all up in arms we are aware of how to do and live the Keto diet/lifestyle, and we do not eat yogurt regularly.  However, Sarah’s has always tried to explain to me how the carb counts on especially Full Fat yogurts can be inaccurate.   Here are a couple of very informative blog post that give the 411 on Yogurt and understanding the different types and how carb counts vary and why.

With all of the various production considerations and varieties taken into account, it can be confusing choosing the best low-carb yogurt. Usually, the best choice is a whole milk Greek yogurt that is unflavored. It is less likely to be thickened with milk powder or other carbohydrate additives than nonfat or low-fat plain yogurt.  If you can find one with live cultures, you may be able to reduce the carb count further. Avoid low-fat and nonfat yogurts as they often contain more carbohydrates.”

In this recipe there is a note on the recipe that may help you reduce the carb count if that concerns you.  The cream sauce could also be made with sour cream or mayonnaise or a combination of both.

This is a refreshing summer salad, and a great side dish with any delicious meat.

Creamy Cucumber Dill Salad

Ingredients

  • 2 English cucumbers thinly sliced
  • 1/4 cup red onion sliced (Optional)
  • 7 oz. greek yogurt or *sour cream or mayo or combination
  • 1 lemon juice and zest (or 1/4 cup white vinegar)
  • 2 tablespoons dill chopped
  • salt and pepper to taste To Taste
  • 1 clove garlic chopped (optional)

Instructions



Preparing Your Salad

  • In a separate bowl add lemon zest, finely chopped garlic and dill. Squeeze in your lemon juice.
  • Add your Full Fat Greek Yogurt or Sour Cream, and mix all ingredients well. This will make your cream salad dressing.
  • In a larger bowl place your thinly sliced cucumbers (we prefer English) and your and chopped red onion in a bowl and mix together.
  • Mix your creamy dressing in with your cucumber and onions and make sure your thoroughly coat your entire salad.
  • Add a teaspoon or so of sugar substitute for a hint of sweetness
  • Let the salad chill in the fridge for 30 minutes to let the flavours mingle.

Notes

*6 net carbs using the Greek Yogurt
*If you use Sour Cream or a Sour Cream Mayo mix the carb numbers will decrease.
*If you reduce the amount of red onions this would also reduce the number of carbs.

    Great recipe 👍 Love the addition of lemon zest. It brings another layer of complexity to the flavor.

    After making the recipe multiple times, I find it best to salt the cucumber slices before dressing to get rid of any excess water that will make the final product pretty watery after sitting for a while. Now my salad can stay nice and creamy for longer periods.

    Definitely my go to recipe for cucumber salad now. Thanks for sharing!
