Keto Brownie Bites (No Bake)
This weeks recipe is Keto Brownie Bites (Fat Bombs), these little babies are packed with flavor and really simple to make with only five ingredients. This recipe is all over Pinterest in lots of different versions, even the folks at Tasty and Food.com have made a version of this.
One legend about the creation of brownies is that of Bertha Palmer, a prominent Chicago socialite whose husband owned the Palmer House Hotel. In 1893 Palmer asked a pastry chef for a dessert suitable for ladies attending the Chicago World’s Columbian Exposition. She requested a cake-like confection smaller than a piece of cake that could be included in boxed lunches. The result was the Palmer House Brownie with walnuts and an apricot glaze. The modern Palmer House Hotel serves a dessert to patrons made from the same recipe.The name was given to the dessert sometime after 1893, but was not used by cook books or journals at the time.

Keto Brownie Bites - No Bake
Equipment
- medium size mixing bowl
- Cookie Baller
Ingredients
- 6 tbsp almond flour Finely ground, sifted for best results
- 6 tbsp baking cocoa powder unsweetened
- 6 tbsp natural sweetener (I used monk fruit powdered and powdered Allulose)
- 5 tbsp butter softened
- 1 tsp vanilla extract or other flavor if desired
Instructions
- Mix all the ingredients together in a medium mixing bowl.
- Stir until you get a smooth ball. If the mass is too hard, microwave for a few seconds to soften it. If it’s too soft refrigerate for 5 minutes.
- Form small balls with your hands, or a cookie baller.
- Chill the bites for 10 minutes before serving.
- Enjoy!
