Low-Carb Chocolate Chip Pudding Cookies

The cookies are super soft and turn out perfect every time. If you like soft chocolate chip cookies, this is the chocolate chip cookie recipe for you!

 

The vanilla pudding mix is the secret ingredient and creates a super soft and delicious chocolate chip cookie.

 

Use a stand mixer or hand mixer to beat the butter and natural sweeteners together. Make sure your butter isn’t too soft or melted.

 

You want it at cool room temperature. If the butter is too warm, your cookies will be flat and greasy…and we don’t want that.

 

Bake for 9-10 minutes, or until slight golden and set around the edges but still soft in the center.

 

Don’t over bake, you want the cookies to be SOFT. They will continue baking as they cool on the baking sheet.

  • Preheat oven to 375 degrees.
  • In a large bowl, using a hand mixer, beat butter and sugars together until creamy. Add eggs and vanilla.. Add pudding mix. Continue to beat until smooth and creamy. Set aside.
  • Working in a separate small bowl, Combine dry ingredients, sifting with a fork to incorporate.
  • Gradually add in dry ingredients until just combined. Stir in chips by hand with a spoon.
  • Drop batter by scoopfuls on to parchment or silicone lined baking trays. Bake only 9 to 10 minutes. Do not overbake. Let cool. Enjoy.
