One Pan Seared Chicken Thighs with Keto Mushroom Sauce

HELLO CJSKETOKITCHEN FAM! This week we bring you another  delicious , easy to make and versatile Keto recipe; One Pan Seared Chicken Thighs with Keto Mushroom Sauce (A One Pot Dish).

This is a simple and delicious recipe for One Pan Seared Chicken Thighs with Keto Mushroom and Herb Gravy.  This is absolutely delicious dish.  The blend of the fresh herbs, and the butter taste just makes the chicken thighs melt in your mouth (using the Tallow adds a different flavor dimension). This is a easy dish to prepare and great for the entire family keto or not.

From a taste perspective this was actually a double “wow!” during C.J.s taste test, which is saying something.  The fresh herbs definitely add a freshness to the dish.  The herbs we used; Thyme, Rosemary were actually pretty affordable at our local Walmart, prices vary of course from store to store, parsley and sage might also be a good combination to add as well.

The dish took roughly 45 minutes to make, that’s always a bit fuzzy with us because we are filming while cooking and that adds other issues.  We also often have to pause the cooking sometimes due some childcare pick up times.  This really is a dish that both keto folks and non-keto folks should enjoy, the keto part really is with the components in the gravy.  We used 8 boneless skinless thighs, we prefer thighs over breast because of the higher fat content.  The macros are based on 1 thigh with approximately with a equal amount of gravy.  We served ours with cauliflower mash and we have a recipe for that here on the blog as well.

This dish was delicious and I took the leftovers for lunch the next day and it was even better.

Ingredients

Chicken Seasonings

  • 2 tbsp Tallow or Lard
  • 8 Chicken Thighs Boneless and Skinless
  • 1 tsp salt
  • 1 tbsp lemon juice fresh if possible
  • 1/2 tsp black pepper

Keto Mushroom Sauce

  • 2 tbsp butter
  • 8 oz Mushrooms Fresh and Sliced
  • 1 tsp Garlic Powder or 2 cloves of garlic
  • 1 tsp Thyme (fresh)
  • 1 tsp Rosemary (fresh)
  • 1 cup Heavy Cream
  • Salt (To Taste)
  • Pepper (To Taste)
  • 1/2 cup Parmesan Cheese (Shredded) Fresh

Instructions

Pan Seared Chicken Thighs

  • Heat the tallow or lard over medium heat..lay the thighs in a single layer in your skillet. Fry both sides until golden brown. Remove and set aside. 

Making Your Keto Mushroom Herb Sauce

  • Heat the butter in the same skillet, add mushrooms and sauté until softened. Add fresh herbs, stirring well. 
  • Add heavy cream and Parmesan cheese. Reduce heat and simmer 10 minutes. 
  • Add reserved thighs, and any residual meat drippings. Warm thighs to desired temperature in the gravy. 
  • Serve with cauliflower mash or riced if desired.

Notes

Macro are based on 1 Chicken Thigh with a equal amount of gravy.
