While CJ and I are experimenting this month with extreme low carb living, CJ requested I make a few butter based sauces to replace the condiments we have become accustomed to with keto, like no-sugar ketchup and BBQ/steak sauces.
First up is a zesty lemon butter sauce. I loosely based this sauce on eatwell101’s cowboy butter sauce, but changed it a bit to make it my own version.
It’s deliciously buttery and rich, with a bright, savory flavor from lemon juice and garlic.
You only need 5 ingredients to make it, and it comes together in less than 5 minutes. I mean, why not drizzle it over everything!
Once you have this lemon butter sauce recipe in your back pocket, have fun experimenting with different ways to use it. It’s amazingly versatile, and I think you’ll find that it tastes great on all sorts of dishes.
This simple sauce is an emulsion–the end product should have a thick, creamy consistency and the light color of cold butter. It’s an indulgent sauce but perfect for pairing with low-fat meats, or if you’re missing sauces when practicing a very low carb lifestyle.

This sauce is really a play on the classic beurre blanc, a beautiful French sauce. Using fresh herbs makes it more fabulous, but dried is fine too.
If you are unfamiliar with tarragon, it adds a fresh spring taste and is highly aromatic with a slight licorice flavor. Very common in French cooking.

Two Savory Butter Sauces
Zesty Lemon Butter sauce
- 6 TB butter melted
- 1/3 cup lemon juice
- 4 cloves garlic fresh
- 1/4 tsp smoked paprika
- 1/4 tsp cayenne pepper optional
- 1/4 tsp crushed red pepper flakes optional
- 1 tsp chopped chives optional
- In a small bowl combine melted butter, garlic, lemon juice, and seasonings.
- Whisk thoroughly. Garnish with chopped chives if desired. To reheat, microwave on low and re-whisk until creamy.
- For tarragon thyme sauce, add seasonings and herbs to butter in a small bowl, add white wine vinegar and whisk until smooth and creamy.
- Serve with all your meats and fish dishes
