Keto Meatloaf – Better Than Your Momma’s!  Yes, we know those are bold words, but this recipe is truly delicious and believe it or not your whole family will enjoy it.  Our non Keto kids and family members love, love this recipe!

Meatloaf is one of those classic comfort foods that many of us grew up enjoying!  I remember that I loved when my Mom would make meatloaf as a child.  This is a Keto Low Carb friendly version of this classic dish.  We originally did this YouTube video way back in 2017 when we first started our keto journey, and it was dishes like this that have helped us have success on Keto and be able to adopted it as a lifestyle.  Variety is important when your doing any type of weight loss effort, and Keto is no different.  This is a delicious keto take on a traditional and classic american comfort food.

We’ve made several versions of this recipe.  We’ve done the classic meatloaf style using a loaf pan, but we’ve also made meatloaf muffins.  I personally prefer the traditional loaf version but the meatloaf muffins are a bit more portable especially for lunches.  We substitute the traditional bread crumbs with pork rinds and parmesan cheese. This comes in a 3 net carbs per serving.  You might be thinking what about the ketchup topping, well we got that covered by using no sugar added ketchup that you can purchase at your local grocery stores.

Doing Keto doesn’t have to be hard or boring.  Recipes like this can help you make it from one week to the next.  Most of the time we keep our keto eating fairly simple.  Basically just a meat, veggies and fat but we do mix in recipes such as this one to spice things up.  Speaking of spicing things up.  Adding bacon crumbles might be a nice addition to recipe – bacon make everything taste better.

Ingredients

Meat

  • 2 lbs. Ground Beef (Beef, Turkey, Lamb or Ground Pork)
  • 1 cup Pork Rinds almost full bag pork rinds ground
  • 2 eggs
  • 2 tbsp Almond Flour
  • Salt and pepper to taste
  • 1/2 tbsp Garlic powder
  • 1 tbsp seasoning salt
  • 1/3 cup Red Onion Finely Chopped

Condiments

  • 2 oz tomato sauce
  • 1 tbsp mustard Several Squirts
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Heavy cream
  • 1 cup shredded cheddar cheese Cheese of your choice

Instructions

  • Combine all ingredients well with clean hands or spoon. Place in a loaf plan.
  • Bake at 375° for 1 hour.
  • Place a sheet of aluminum foil under meatloaf to catch drippings and prevent scorching.

Net Carbs = 3 Grams

  2. It tasted like real meatloaf and better. Is one serving 1/4 of the meatloaf. Is so , with my 1/4 I can still cut into halve. Is that mean I can divided the
    macro ito 2. For example : Cal 236, protein 26.37, fat 13, net carb 2 ?

    1. Hi Po-Yin, yes if you divide the serving in half then split your other macros (calories, proteins….) as well for the smaller piece.
