Keto King Ranch Casserole

I consider myself the queen of low carb casseroles, so I’m truly surprised I hadn’t tried to duplicate this one. Until now, of course 😉

Truth be told I had never had this casserole until I came to Washington state. My son’s grandmother made it when I was first introduced to their family. They didn’t call it King Ranch casserole. They simply called it chicken enchilada casserole.

With its combo of chopped chicken, cheese, tortillas, and spicy tomatoes in a creamy sauce, this dish is a sure-fire hit.

From what I hear, it’s impossible to go to any sort of potluck in Texas and not see one of these.

 

 

While the Midwest is responsible for more casseroles per capita than other regions of the country, Texas holds an exception close to its heart: King Ranch Chicken. It’s an amalgamation of several key Tex-Mex food groups.

 

 

King Ranch chicken is believed to date back to the 1940s or maybe the 1950s. The original recipe used cream soups while some modern versions use a flour-and-butter roux instead, or in my keto version, almond flour and butter.

 

 

The other reason this casserole is such a winner is that it’s amazingly easy to make. The key ingredient is Rotel , a zesty blend of chopped tomatoes and chili peppers in a can. You can choose from several levels of spice, depending on how hot you like it.

So all you have to do is fry up a chopped onion, then mix that with your cubed chicken, Rotel, and few other easy steps,

Once that’s heated through, layer it in a baking pan with corn tortillas and cheese, and pop it in the oven. When it comes out, the cheese will be melted over top of everything, so every serving will come out hot, gooey, cheesy, creamy, and spicy. It’s everything you could ask for in a casserole, all in one pan.

Ingredients

Instructions

  • Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
  • Melt butter. Add chopped onion. Cook 3 to 4 minutes until soft. Add flour, cook an additional 3 to 4 minutes to remove flour taste. Add chicken broth. Cook until slightly thickened about 5 minutes.
  • Stir in sour cream, salsa, and rotel. Add remaining ingredients. Stir in cheese.
  • Put mixture into baking dish. Cover. Bake 20 minutes. Uncover and bake an additional 15 minutes, broiling a final minute if desired for browning.
  • Let sit 15 minutes before serving.
