shortbread crust:

Cheesecake batter:

  • 5 oz cream cheese softened
  • 2 TB natural sweetener allulose
  • 1 tsp vanilla bean paste optional, or extract
  • 1 egg yolk room temp.

Instructions

Shortbread crust:

  • Melt butter. Add to almond flour and cinnamon. Form crust. Press into bottom of two 9 oz ramekins. Set aside.

Cheesecake batter:

  • In a small bowl, combine cream cheese and sweetener for 1 minute until blended with hand mixer.
  • Add vanilla and egg yolk. mix well until fluffy.
  • Divide batter evenly between ramekins.
  • cover tightly with foil. puncture foil to release steam.
  • Cook in preheated air fryer set at 310 degrees for 25 minutes, or until internal temp is 150 degrees.
  • Uncover and chill 4 hours, or overnight.
