Keto Low Carb Shortcake at Cjsketokitchen! When Sarah told me she was making this mentally I went to all the controversy related to certain foods on Keto. I’m sure we will get the “that’s not keto…” comment and that’s fine. If you don’t include Berries occasionally while you practice keto more power to you. We live Keto as a lifestyle and not just a short term diet, but the great thing is that you can do as you please and so can we. We are NOT THE KETO POLICE! This really did turn out well and the berries were a nice change/addition to our keto lifestyle. This really is a delicious recipe and we hope that it becomes one of your favorites. Enjoy!
As summer is winding down, so is the end of the berry season. I wanted to take advantage of the last fruits of summer, that’s why I thought everyone needs this recipe. Skip the store-bought full of sugar and carbs, and who-the-heck-knows what else…and make berry shortcake completely from scratch. With only a handful of basic ingredients, you can make fluffy sweet biscuits.
Layer them with juicy berries and fresh whipped cream for a totally unforgettable summer dessert.
I hope I’m not overwhelming you with all this homemade goodness. LOL I promise it’s very easy if you follow my step-by-step instructions. And that’s what summer is about, right? Simple, happy, homemade goodness that celebrates the seasons fresh flavors.
So why is shortcake, sometimes more of a biscuit? Even though the name “shortcake“ implies that this dessert would be cake-based, it’s the short in the name that tells you that this classic recipe is a biscuit-based dessert… The “short“ refers to a specific type of dough where the fat is “cut“ into the flour to create a pastry that is more crumbly than stretchy.
Homemade biscuits are one of life‘s greatest treasures. This biscuit recipe is very similar to my garlic cheddar biscuits that are already up on the blog. It’s really just a couple of very easy steps.
- You cut cold butter into your dry ingredients… You can either use a pastry blender or just two forks.
- Add your wet ingredients and stir briefly.
- scoop into even sized balls, sprinkle generously with sweetener.
Bake and enjoy.
Here’s a few tips:
- Start with cold ingredients… You want your butter to be really cold, so that even after you’ve combined your dough you can see the lumps of cold butter.
- You also don’t want to handle your dough or overwork it too much.
- Adding cream to the biscuit dough gives the shortcake a rich flavor and light and tender crumb. Basically, the best biscuits ever!
A word on the berries… You only need a few to satisfy your summer sweet cravings. Slicing the berries berry finally gives you a lot of berries for a few amount of carbs. Add a sprinkle of sweetener, and leave it for 30 minutes. The sweetener will soften the fruit and allow the natural juices to release creating almost like a thin sauce… The fancy term is macerated, and it’s really easy to do.
Think berries aren’t “ketogenic“… Well according to dietdoctor.com, raspberries ,blackberries, and strawberries can be eaten in small amounts on a ketogenic or low-carb diet, and you can eat them more freely if you are on a more moderate low carb diet. as long as you eat them occasionally in small amounts, you should be just fine. I was pleasantly surprised at how well these Keto Shortbreads turned out. They are basically a sweetened version of our Keto Biscuit recipe, and they really weren’t supper sweet. A serving size is actually a half (1/2) of a shortcake. The macros in the recipe are for 1 serving and if you make 10 shortcakes you could serve 20 people. We did not calculate the fruit, because we have no idea how much you might use or what types of berries you might use. Keep in mind that most fruits are high in carbs and sugar, we used these specific berries (blackberries, raspberries…) because they are low in carbs. Don’t be going out and using apples, oranges…I think you get the picture. We do occasionally enjoy a few berries during the summer, however when we purchase berries most of them are consumed by our children. Berries, can be part of your keto low carb lifestyle so enjoy them on occasion and don’t stress about it. - Silicone Baking Mat
- Parchment Paper

- 3 Cups almond flour
- 1 1/2 teaspoon Baking powder
- 1/4 teaspoon salt
- 6 Tablespoons butter MUST BE COLD! cut into cubes (About 85 grams)
- 2 eggs large beaten
- 1/4 Cup Heavy cream
- 1/2 Cup Erythritol I used a granular erythritol monk fruit blend
- 1 teaspoon Vanilla Extract
Instructions
- Instructions
- Line a baking sheet with parchment or a baking mat and preheat the oven to 350F.
- In a large mixing bowl combine the almond flour, baking powder and salt.
- Add in the cold butter cubes and use a pastry cutter to cut in the butter until the mixture is pea size crumbles. You can use to forks or your fingers as well.
- Make a well in the dry ingredients, Stir in the eggs, heavy cream, sweetener and vanilla.
- Using a 3 tablespoon kitchen scoop, divide the dough into 10 biscuits.
- Bake in the pre-heated oven for 18 to 20 minutes. A toothpick will come out clean.
- Serve with summer berries of choice, and whipped creamMakes 10 shortcake biscuits....one half is a serving. One whole biscuit would be 2 servings.
