What’s the Difference Between Jam and Jelly?
Jam is made with chunks of fruit with sweetener , while jelly is made from only fruit juice and sweetener.

You’ll notice a big difference in texture, with jam being textured and spoonable as opposed to jelly which is smooth, firm, and clear.

 

 

WHY USE GELATIN?
When gelatin liquid is allowed to cool, it is transformed by the collagen into a soft gel.

Gelatin can be used to thicken gravies, sauces, jam, and many other types of food and make ice cream, marshmallows, cake frostings, and gummy candies.

 

 

 

WHAT DOES“BLOOMING” GELATIN MEAN?
Blooming gelatin is a step integral to ensuring the smooth texture of a finished product.

It involves sprinkling the powdered gelatin into a liquid and letting it sit for 3 to 5 minutes. Then, when the mixture is heated, the gelatin will dissolve evenly.

CJ’S TEST FOLLOW UP:

Sarah’s been making this jam recipe for several months now, it’s pretty much a staple in our refrigerator.  It’s really nice to have and seems to last a long time.  It’s a lot more flavorful with better ingredients than the store-bought sugar-free jams.  This batch didn’t seem as sweet, but it really had a good natural berry flavor. We did Keto for years with doing the keto bread, I have a love hate relationship with the keto breads because most actually don’t taste like much.  At any rate it is nice sometimes to have a piece of toast using keto bread.

Ingredients

Instructions

  • In a small saucepan over medium heat, combine berries, water, and sweetener. Bring the berries up to a simmer, reduce heat. Simmer 20 minutes.
  • Bloom gelatin by sprinkling over lemon juice in a small bowl.
  • Remove berries from heat. Tear or drop small spoonfuls of the thicken gelatin mixture into hot berries. Whisking as you do this.
  • Let cool. Adjust sweetness if desired. Pour into jars or containers. Keep refrigerated. Keeps 2 to 3 weeks in fridge. May be frozen if desired.
