One-pan keto chicken Marsala
Chicken Marsala is an Italian-American dish of golden pan-fried chicken cutlets and mushrooms in a rich Marsala wine sauce.
Though it’s a classic restaurant dish, it’s really easy to make at home. With just one pan, you can have it on the dinner table in 45 minutes. The recipe makes a lovely sauce that is delicious.

What is chicken marsala?
A variation of the traditional Italian Scaloppine, this Americanized Marsala version is completely addictive. It’s no wonder it’s one of the most ordered chicken dishes in restaurants!
Made with golden, crispy, pan-fried chicken, a mushroom-filled creamy Marsala wine sauce and a good kick of garlic, this Chicken Marsala recipe is next-level…..
Tips and thoughts:
You’re going to start with thin thigh fillets. If you choose breasts….a faster prep-time, cut your chicken breasts in half horizontally to make fillets. Quicker and easier than pounding them thin with a meat mallet and yields the same results.
I use a combination of oil and butter to fry the chicken for the best golden browned results and delicious flavor.
Cook the sauce in the same pan as the chicken. Don’t get rid of any chicken bits from the pan as they add tons of flavor into the sauce!
Scrape them up while the mushrooms are releasing their liquid!
Best marsala wine to use:
Marsala wine is a fortified wine from Sicily with a deep flavor and is used in this sauce to create a caramelized rich flavor.
When making savory dishes like Chicken Marsala, dry Marsala is the best option. Sweet Marsala will be higher in carbs!
You can also find Marsala cooking wine in the grocery store with the vinegars.
The flavor will not be as rich and authentic as using traditional Sicilian marsala… But it will still taste delicious.

One-pot keto Chicken Marsala
- large skillet(cast iron optional)
- 2 lb. chicken thighs
- 2 TB butter
- 8 oz mushrooms button, cremini, or portabella
- 3 TB shallot chopped
- 2 cloves garlic
- 1/3 cup dry Marsala wine
- 2/3 cup chicken broth
- 2/3 cup heavy cream
- 1 tsp salt
- 1 tsp pepper
- 2 TB thyme fresh; chopped
- Cook chicken in a large skillet on both sides, until the chicken is golden and just barely cooked through. 6 to 7 minutes. Transfer to a plate. Reserve drippings.
- Add butter to skillet. Add the mushrooms and shallot. Cook stirring frequently until they begin to brown and soften. Add the garlic, seasonings and chopped thyme. Cook 1 to 2 minutes more.
- Add the broth, wine, and heavy cream. Scrape any brown bits from the bottom of your skillet.
- Bring the liquid to a low boil, reduce heat and simmer uncovered for 10 to 15 minutes until slightly thickened and darker in color.(Sauce may be thin until the end of cooking)
- Add the chicken and any juices back into the skillet.
- Reduce the heat to medium-low and simmer until the chicken is coated and warmed. Serve.
