Chicken Divan is a creamy casserole that’s traditionally made with a simple combination of chicken, broccoli, sour cream and mayo, and simple seasonings including a dash of curry. Yum.

 

Named after the restaurant it was created in, Divan Parisian, this dish was originally created with chicken, broccoli, and a classic béchamel sauce made with Gruyere cheese. It was served as their signature dish, being both incredibly delicious yet easy to make.

It’s hard to believe this classic casserole was such a coveted dish back in its day; we never see these delicious, filling, and simple casseroles served in restaurants anymore! It has since become a favorite in North American households.

 

I actually have never tried it. I became curious about it while googling oldest American casseroles. Logically, as the keto casserole queen I decided I simply had to try it, keto-style of course!

Ingredient Notes:

Broccoli – Fresh or frozen. I find frozen is actually more “fresh”

 

Chicken –Pre-cooked. You could up some cubed chicken breast in a skillet, however this is a great opportunity to use up leftovers, or a rotisserie chicken like I did.

 

Sour cream-Or Greek yogurt would substitute.

 

Mayonnaise- condensed soup have replaced the bechamel sauce the years in most home cooks recipes… It’s not very keto, so the combination of mayonnaise and sour cream acts as a wonderful white sauce here.

 

Cheddar cheese-Marble, Monterey Jack, Colby, Gruyere or Swiss will all work as well. I enjoy a sharp cheese in this dish.

 

“breadcrumb” topping- I’m using my favorite grated Parmesan cheese/ almond flour panko here. Delicious crunch with less carbs.

 

HOW TO SERVE:

 

Since this recipe features chicken and broccoli, chicken divan is usually served all on its own. Bring some hot sauce or red pepper flakes to the table, and dig in.

 

If you have family members who don’t mind adding some carbs and would like a bit more sustenance to the meal, this dish would be great over some rice or pasta. It’s nice to have something to soak up that cheesy sauce!

 

STORAGE AND FREEZING:

 

You can prep this recipe and keep it in the fridge 2-3 days ahead of time. Cover it well with plastic wrap or foil to store.

 

My only piece of advice is to leave the topping off until right before baking to keep it nice and crisp.

 

This is one of those easy dinners that can be prepped ahead of time, and freeze for an easy dinner. You can freeze it baked or unbaked.

 

Mine stored nicely for 3 to 5 days refrigerated without issue.

I know that I sound like a broken record every week when I do my taste test.  But Sarah rarely makes a dish that is bad, I’m trying to work on how I describe the taste of the dishes but believe me if I say that “It’s good” then it is.  Generally if there is a doubt about a recipe we either will practice it or will not make it.  We understand that every dish is not for everyone but we really do try and give you good recipes that you can do and replicate at your home.  This Chicken Divan Casserole was delicious and I was really impressed with the quality of the dish, and is with most casseroles it was better the next day.  Enjoy.

Keto Chicken Divan Casserole

Ingredients

  • 3 lbs. chicken cooked; chopped
  • 20 oz. broccoli florets cooked
  • 8 oz. sour cream
  • 8 oz. mayonnaise
  • 1 TB lemon juice
  • 1 tsp. curry powder
  • 8 oz sharp cheddar cheese shredded
  • 1 TB butter melted
  • 1/2 cup parmesan grated
  • 1/2 cup almond flour

Instructions

  • Preheat oven to 350 degrees.
  • Chop cooked chicken into bite-sized pieces. Place in a 9x13 inch baking dish.
  • Steam broccoli. Drain well. Place over chopped chicken.
  • Combine wet ingredients and spices. Whisk to incorporate. Pour over casserole. Add shredded cheese mixing slightly.
  • Mix melted butter, flour and parmesan. Sprinkle over the casserole evenly.
  • Bake for 30 minutes. Broil top if desired. Allow to sit 10 minutes. Serves 8
