Keto Cheese Slaw
This viral internet sensation is naturally keto, although the original recipe is not marketed as such.
Our cheese slaw is like a more currently popular cousin of pimiento cheese, with banana peppers and jalapeños in place of the pimientos, and Swiss cheese in place of the Cheddar.
The original dish can be traced to caterer Lib Wilhelm whose recipe is featured in the Roanoke Junior League cookbook “Oh My Stars! Recipes That Shine” published in 2000.
The rest is history, and to this day, the dish remains popular at local parties and occasions, and has now gone viral on social media.
Key ingredients:
Swiss cheese: We recommend a mild, firm cheese like Swiss because it delicately balances strong flavors of pickled peppers, jalapeño chiles, and fresh scallions.
Similar cheeses like Monterey Jack or Pepper Jack cheese are also good options.
Mayonnaise: We recommend a high quality mayo for that classic tang that compliments the flavors of this recipe, but any mayonnaise will do.
Banana peppers: Banana peppers are an essential ingredient and aren’t so much spicy as they are tangy. While they’re notoriously sharp and and vinegary, a generous portion of mayonnaise and mild cheese brings out a subtle, juicy sweetness.
Green Onions: Chopped yellow or white onions are a suitable substitute, but we recommend green onions for a peppery onion aroma and the pop of green color.
Jalapeños: I used pickled jalapeño chiles chopped—not sliced—to fully incorporate into the creamy mixture and bump up the heat. You could use fresh if you preferred.

Keto Cheese Slaw
Ingredients
- 1 lb Swiss cheese grated
- 3/4 cup banana peppers diced
- 1/3 cup pickled jalapeño peppers diced
- 3/4 cup mayo
- 2 green onions diced
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Combine all ingredients in a medium sized bowl.
- Mix thoroughly. Chill for flavor intensity.
- Serve cold with crudité such as low carb chips or celery.
