Keto Zucchini Bread
Ingredients
- 1 1/2 cups almond flour
- 1/2 cup brown natural sweetener
- 1/2 cup granular allulose
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1/3 cup avocado oil
- 1 tsp vanilla bean paste
- 3 eggs room temperature
- 1 3/4 cup zucchini grated; drained
- 1/2 cup sugar-free chocolate chips optional
Instructions
- Preheat oven to 350 degrees.
- Add sweeteners, oil, eggs, and vanilla to a medium size bowl. Beat with a hand mixer. Add zucchini. Beat again until combined.
- In a separate small bowl. Combine dry ingredients.
- Slowly add dry into wet, Mixing half at a time. Add batter into a silicone loaf pan.
- Bake 45 minutes to 1 hour, or until toothpick comes out clean.
