This week’s recipe is pretty, pink, and delicious! If you like cheesecake (even a little), you are likely going to love this!

Our Be My Valentine Strawberry parfait is light and fluffy, sweet, and has a deliciously light cream cheese flavor.

 

 

No bake and perfect for your sweetheart, this easy mousse recipe is a lovely addition to your spring entertaining menu.

This strawberry and chocolate combo, would be perfect as a Valentine’s treat, or delicious as a light spring or summer dessert.

 

 

Strawberry desserts are among our favorite summer desserts because the strawberries are starting to come into season.

 

 

picked at the peak or ripeness they are just so lovely and sweet. I love to take full advantage of their bright, sweet flavor and that is how this recipe was created.

 

 

However, frozen berries would be equally delicious!

 

I made a few little changes to my basic cheesecake mousse recipe this time, adding fresh fruit puree to the mixture.

A Few Thoughts:

Using full-fat whipped cream makes a fantastic difference as well both in flavor and texture. I’m sure as spring and summer roll in, I’ll try other fruit purees as well.

 

I like the addition of the chocolate crust for a little texture, but it is not necessary, additionally, you could skip the cocoa powder and make a “graham cracker” crumble instead.

 

Be sure to adjust sweetness to your preferences. I feel powdered sweetener is very important. You can pulverize your granulated sweetener if necessary in a food processer or coffee grinder.

 

I wanted my mousse layer to be more vibrant pink, so I added a bit of food coloring, but that is completely optional.

 

 

I garnished with berries dipped in chocolate, but let your imagination go wild! To make dipped strawberries, simply melt sugar-free chips in the microwave on low…dip berries, and let harden on parchment paper. Easy-pe

CJ’S TEST FOLLOW UP:

This dessert was truly delicious!  It got better as it had time to chill and the chocolate crumbs had time to mellow a bit.  I also got a chance to lick the mixing bowl and the strawberry cheesecake mixture alone is great!  I requested another batch for the weekend.  Enjoy!

Be My Valentine Parfaits

These strawberry cheesecake and chocolate parfaits are bursting with fresh light creamy flavor. Perfect to spoil your sweetheart.

Instructions

  • In a large skillet...slowly toast almond flour until lightly browned and aromatic.
  • Add crumb into a small bowl. Add sweetener, cocoa powder and melted butter. Toss to combine. Set aside.
  • In a medium bowl, beat cream cheese and sweetener with a hand mixer. Add heavy cream and vanilla. Puree strawberries. Whip into cheesecake mixture.
  • In fancy bowls or glasses, layer chocolate crumbs, followed by strawberry cheesecake mixture layer by layer, ending with cheesecake mixture. Garnish if desired. Chill.
