It’s true, I have a special bond with “Big Red”, my air fryer. We’ve been hanging out and having good times for two years now. Lol.
So I thought it was high time to make something for the channel utilizing one of my very favorite kitchen appliances.
First is pork belly bites….
Air Fryer Pork Belly Bites are flavorful, seasoned pieces of pork belly that are cooked crispy in an air fryer with less oil and mess compared to deep-frying.
I have coated mine with a delicious low carb glaze to make them extra scrumptious.
WHAT IS PORK BELLY?
Pork belly is like a huge slab of bacon, but uncured, unsliced, and unsmoked.
Both pork belly and bacon come from the flesh from the underside, or belly, of a pig. You could buy pork belly and make your own bacon.
However, once you try this pork belly recipe, you may want to stick with pork belly over bacon.
I bought mine already pre-cooked at Trader Joe’s, but a lot of grocers are offering it for sale now.

What is a jucy lucy you may ask?
A Jucy Lucy or Juicy Lucy is a stuffed burger with cheese inside the meat instead of on top, resulting in a melted core of cheese.
Two bars in Minneapolis claim to be the inventor of the burger, while other bars and restaurants have created their own interpretations of the style.
The burger is prepared by putting cheese between two patties of meat, then sealing both patties around the cheese to create a single patty with a cheese core.
As the burger cooks, the cheese inside melts. This has the effect of keeping the meat near the center of the burger very juicy.
It also separates the cheese from the bun, resulting in a slightly different texture than the usual cheeseburger.
We generally serve ours without the bun, that served on a low-carb bun would be extra indulgent.
I have made this fabulous creation in both a regular skillet and also in my air fryer… I find either way to be savory and satisfying… But I like the ease and clean up of my air fryer.
CJ’S TEST FOLLOW UP:
These two air fryer recipes were DELICIOUS! Especially the glazed Pork Belly, WOW WOW WOW! Crispy, yet tender bursting with flavor. The Juicy Lucy’s were great as well although I’m still trying to figure out the best way to do these in an air fryer. The trick is keeping the cheese in the burgers and keeping the burgers sealed. In a skillet or flat top I suppose you could add a weight on the burgers to keep them from separating. No matter though because these babies were flavorful and delicious.

Keto Pork Belly Bites
- Preheat air fryer to 400 degrees.
- Cut pork belly into 1 inch cubes and pat dry.
- In a medium sized bowl combine pork belly and the rest of the ingredients. Coating well.
- Lay the cubes in a single layer in your airfryer. You may need to do multiple batches depending on the size of your air fryer.
- Cook cubes for 15 minutes, shaking and flipping several times through the cooking process. Total cooking time will depend on your pork belly and air fryer.
- Remove and serve warm
Keto Jucy Lucy
- 2 lb ground beef
- 8 slices American cheese sliced into squares
- 1 tsp salt
- 1 tsp fresh cracked black pepper
- Preheat air fryer to 400 degrees.
- Separate beef into 8 equal patties. season both sides with salt and pepper.
- Place the cheese in the middle of 4 patties. Cover with the other patty.
- Push the patties together and pinch the edges, assuring there are no holes for cheese to seep out. Make a divit in the top for steam to escape.
- Cook 7 minutes, flip, cook 8 minutes more. Additional time may be needed depending on your air fryer.
