Keto Chewy Caramel Toffee

 

Keto chewy caramel toffee recipe is so easy to make! It is buttery, contains the perfect amount of sweetness and is mixed with chocolate and toasted almonds!

 

This keto toffee is going to satisfy those cravings for something sweet, rich, and delicious. Buttery, and just on the right side of sweet, it won’t send your blood sugar levels soaring like the traditional stuff.

This caramel toffee recipe is chewy rather than brittle. We do have a crunchy toffee recipe already up on our blog, and it will be linked at the bottom of this post.

 

 

 

 

In the US, toffee can be both chewy and hard. It is more of a general term for all candy made with sugar and butter.

 

Let’s talk ingredients:

Butter: This good old fashioned staple is going to give our candy richness. You can use unsalted or salted either is fine.

 

Allulose: I chose allulose as my sugar free sweetener. Allulose is a making it zero carb. It is considered a “rare sugar”

 

The benefit over erythritol is that it does not re-crystallise or get gritty. It’s thanks to the allulose that this keto toffee stays chewy, smooth and creamy.

 

It is not a sugar alcohol, so it can generally be better tolerated.

 

Sugar free chocolate chips: We use ChocZero. A dark chocolate with 90% cocoa solids such as Lindt is also an option, you can use milk chocolate if you prefer, but considering the sweetness already present, I went with dark. A discount code is always in the description link of our videos.

 

Almonds: I chopped and toasted for extra flavor, you could use pecans, macadamia nuts, or hazelnuts as well!

 

Fleur De Sel: A great flaky sea salt is so marvelous here. It really gives a sweet and savory combination. But it is completely optional.

 

Vanilla/ caramel extract: I use both for depth of flavor, but it is optional.

If your caramel separates….

 

It happens to all of us! You’re making a beautiful batch of caramel toffee, and all of the sudden you notice a thin oily layer.

 

Sometimes it can be repaired by by removing the saucepan from the heat and constantly whisking. until it becomes smooth again.

 

Additionally, you can try adding a spoonful or two of very hot water or heavy cream to try to help it pull together.

Instructions

  • Line an 8x8 baking dish with parchment paper. Set aside.
  • In a medium saucepan, add cubed butter, allulose, and salt. Heat over medium heat until melted.
  • Keep heating, stirring almost constantly, until mixture reaches about 260 degree on a candy thermometer, or turns rich and amber in color.
  • Remove from heat, stir in extracts. Wait 2 minutes, then por into baking dish evenly. Allow to cool 2 additional minutes.
  • Top with chips. Cover with foil. Allowing chips to melt.
  • Smooth top with spatula, sprinkle with nuts and optional additonal flaky sea salt.
  • Allow toffees to fully cool before refrigerating. Cut into 16 even squares.
