Keto Cinnamon Apple Cake
I know vegetables in cake can raise some eyebrows, but keep an open mind. You’ve heard of carrot cake, right? Zucchini is loaded with moisture, and adds a ton of volume without much flavor at all. It’s really a template for any flavor. In this case in place of apples.
Think of it as applesauce or banana, but with less flavor. It acts as a wet ingredient, and pairs wonderfully with cinnamon spices and walnuts.

Keto Cinnamon Apple Cake
Ingredients
- 2 cups almond flour
- 1 zucchini seeded, peeled, cored
- 1 cup avocado oil
- 1 cup brown natural sweetener
- 1/2 cup white natural sweetener
- 1/2 cup walnut
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp nutmeg
- 1 tsp apple extract or vanilla
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350 degrees. Lightly grease a 9-inch baking dish.
- In a medium bowl mix together the eggs and the oil. Add the sweeteners, spices, and extract.
- In a separate bowl mix your dry ingredients. Slowly add into wet ingredients.
- Fold in zucchini and nuts. Pour into baking dish.
- Bake for 50 minutes, or until just cooked through. Cool and enjoy.
