Keto Cinnamon Apple Cake

Today I’m sharing a simple sheet cake recipe with plenty of spice flavor, notes of brown sugar, and kisses of sweet vanilla. It’s simple, yet impressive. 

I know vegetables in cake can raise some eyebrows, but keep an open mind. You’ve heard of carrot cake, right? Zucchini is loaded with moisture, and adds a ton of volume without much flavor at all. It’s really a template for any flavor. In this case in place of apples. 

Think of it as applesauce or banana, but with less flavor. It acts as a wet ingredient, and pairs wonderfully with cinnamon spices and walnuts.

Keto Cinnamon Apple Cake

Ingredients

Instructions

  • Preheat oven to 350 degrees. Lightly grease a 9-inch baking dish.
  • In a medium bowl mix together the eggs and the oil. Add the sweeteners, spices, and extract.
  • In a separate bowl mix your dry ingredients. Slowly add into wet ingredients.
  • Fold in zucchini and nuts. Pour into baking dish.
  • Bake for 50 minutes, or until just cooked through. Cool and enjoy.
