This week we bring you a Keto One Pot Spanish Chicken recipe.
This week we bring you another delicious Ketofied recipe; this dish was inspired by the classic latin dish Arroz Con Pollo which means Rice (Arroz) with Chicken (Pollo) but since rice isn’t keto friendly we modified the dish using riced cauliflower.
We also used chicken thighs because we find them to be moist and tender versus the dryness often associated with using chicken breast. We also find that chicken thighs are lower in protein, so it helps with the macros on keto.

Keto One Pot Spanish Chicken | Keto Arroz Con Pollo
- 6 or 7 boneless skinless chicken thighs
- 16 oz riced cauliflower
- 2 cans Rotel 10 oz cans
- 1 can sliced black olives
- 1/4 cup chicken stock
- 1 tsp cumin
- 1 tbsp chili powder
- 3 tbsp creole seasoning we used Tony Chachare brand
- 1/2 cup chopped cilantro
- 1 tsp Lard or Olive Oil or Butter
- Sour Cream and Cheese to top
- 1 tsp garlic powder
- 1/2 tsp salt
- In a large Dutch oven or cast iron pan, put enough oil or lard to brown your chicken thighs...saute' your thighs until lightly browned on both sides. Sprinkle both sides with spices. Once seasoned and browned, remove and set aside.
- In the same pan add 1 tbsp more oil/lard. Add riced cauliflower and saute" in drippings until lightly browned and starting to soften. Add remaining ingredients and cooked chicken.
- Bring to medium boil, reduce heat to low and simmer at least 30 minutes or longer if desired. Use more seasonings if necessary to achieve desired flavor.
Serve with sour cream and cheese to top.
