Keto Stuffed Peppers Soup

With cold weather almost nationwide, soup season is in full swing! Brrrrrr…

This stuffed pepper soup is easy to make for a hearty meal in one bowl.

stuffed pepper soup is a warming meal loaded with ground beef, onions, riced cauliflower and bell peppers in a tomato based broth.

It tastes just like classic stuffed peppers, but without all the work!
I love stuffed peppers, but it seems like they take forever to bake, and I always end up with peppers that are either too crunchy or too mushy. Stuffed pepper soup has all the same flavors but is so easy to put together on a busy weeknight.

This recipe uses a combination of beef base for depth of flavor. Tomato sauce and diced tomatoes with fresh bell peppers, adding a nice tomato base, and we offset the acidity of those tomatoes with a hint of brown natural sweetener…It adds the perfect touch!

Keto Stuffed Peppers Soup

Ingredients

  • 2 lbs ground beef
  • 2 cups bell pepper chopped
  • 1/4 cup onion chopped
  • 1 cup riced cauliflower
  • 2 TB beef bullion
  • 2 TB brown swerve
  • 1 tsp onion salt
  • 1 tsp garlic powder
  • 26 oz tomato sauce
  • 28 oz diced tomatoes
  • 4 cups water

Instructions

  • Brown ground beef in a stockpot or dutch oven.
  • Add onions, peppers and riced cauliflower into cooked beef. Sautee for 5 minutes.
  • Add in spices, beef bullion, sweetener. Sauté again briefly.
  • Add in remaining ingredients. Cover and simmer 30 minutes until the veggies are tender. Serve immediately. Top with cheese if desired.
