Authentic Chicken Cacciatore is an Italian classic, and you’ll never get a more succulent home cooked meal than this recipe!
Easy to make and loved by the entire family, this one pot Cacciatore aromas fill your entire house with comfort and warmth as it cooks itself on the stove or in the oven.
Cacciatore means hunter in Italian, and alla cacciatora translates to a ‘hunter-style’ meal with chicken (or rabbit), onions, tomatoes, herbs, vegetables, and usually wine or vinegar.
It’s naturally low in carbs, with the main carbs coming from the natural sugars found in tomatoes.
This easy throw together meal has the most delicious sauce full of incredible flavours!
Garlic, bell peppers, onions, mushrooms and olives swimming in a rustic tomato Cacciatore sauce, simmering and soaking into juicy chicken thighs until they fall off the bone and melt in your mouth.
I love using chicken thighs because we find them to be moist and tender versus the dryness often associated with using chicken breast. We also find that chicken thighs are lower in protein, so it helps with the macros on keto.
Additionally, with rising meat prices. Bone-in, skin on meat is still less expensive.
Cook the sauce in the same pan as the chicken. Don’t get rid of any chicken bits from the pan as they add tons of flavor into the sauce!
Scrape them up while the mushrooms are releasing their liquid!

One-pot Keto Chicken Cacciatore
- 8 chicken thighs bone in
- 1/2 onion small; diced
- 1/2 green pepper diced
- 8 oz mushrooms chopped
- 3/4 cup dry red wine
- 28 oz crushed tomatoes
- 2 tsp thyme
- 2 tsp basil
- 3 cloves garlic
- 1 tsp herbal seasoning 21 seasoning salute
- 4 oz black olives
- 1 tsp salt
- 1 tsp pepper
- In a large heavy saucepan or stockpot, brown your chicken thighs on both sides. Transfer to a plate. Reserve the chicken drippings.
- Add the peppers, onions, and mushrooms to the pan. Sauté briefly until translucent. Add garlic.
- Add your herbs, seasoning, and wine. Cook 3 minutes
- Add the tomatoes with their juice. Return the chicken to the pan. Cover. Heat to a simmer. Cook 30 minutes, or until the chicken is tender. Add olives...Serve warm.
