You could also easily create a crust if you desire using keto cookie crumbs or toasted almond flour and nuts. Keto granola would be fantastic as well.
A Few Tips:
Cream cheese: This adds a nice tang and gives it that ultra creamy consistency. Just make sure your cream cheese has softened before using. If it’s too cold, it could create a lumpy texture.
Powdered natural sweetener:
The sugar helps balance out the tang from the cream cheese and adds the perfect amount of sweetness.
Vanilla adds the perfect boost of flavor. You can also mix in some fresh lemon juice to add a hint of tartness. Alternatively, another flavor extract would be delicious as well.
This is key for creating a thick consistency.
Do I Have To Use Powdered Natural Sweetener?
Yes, the erythritol needs to be powdered instead of granulated. Otherwise, the texture is going to be very grainy and not as appealing. If you opt to use granulated, it may turn out okay, but I don’t recommend it. I prefer my cheesecake to be extra creamy and fluffy, so granulated just doesn’t give me that result. If you have no other sweetener, you can grind it in your coffee grinder or food processor.
If you want to make this extra fancy, simple use a ziploc baggie and a piping tip, add a star tip, and viola you have a fancy swirl to your easy cheesecake.
You can eat this cheesecake right away, you can also refrigerate it for a few hours or overnight, but I do recommend letting it come back to room temperature before serving it.

This 3 ingredient NO BAKE cheesecake was surprisingly delicious! I’m not sure why I said surprisingly because Sarah doesn’t make bad tasting food (and NO I don’t have to say that).
