Keto BBQ Chicken Casserole
This BBQ chicken casserole is a great solution to the question of what to do with all of those chicken leftovers!

Barbecues are the best part of spring and summer! But standing over the grill can be taxing Till now!
Our whole family loves this casserole – it’s a great way to use up our leftovers to create a totally different meal experience.
Ingredients for Leftover BBQ Chicken Casserole
Here’s what you’ll need to make this barbecue chicken casserole:
- Chicken. We will typically use leftover rotisserie but also grilled or barbecued works well. If we have chicken thighs, we’ll throw that meat in too.
- Cooked cauliflower rice… adds satisfying texture without overpowering the flavor.
- Tangy barbecue sauce. My favorite barbecue sauce is homemade, that’s not too sweet. But use whatever you like!
- Cheddar cheese. Nothing melts like freshly grated cheese! Choose a favorite kind, and be sure to have some extra for sprinkling on top.
- Diced tomatoes. They’re sold in different varieties. I enjoy rotel.
- Diced bacon. We usually have bacon hanging out in the fridge or use the pre-made stuff Whatever you like!
- Sour cream
- Chopped green onions…. be sure to have extra on hand for garnishing the top of the casserole if you like.
This is smoky, cozy, and utterly delicious! It’s also super easy to whip up using leftover cooked chicken — just perfect for a busy weeknight.

Keto BBQ Chicken Casserole
Ingredients
- 3 cups chicken cooked; chopped
- 3 cups riced cauliflower
- 3/4 cup SF BBQ sauce
- 1 can rotel
- 3 green onions diced
- 3 strips bacon cooked; chopped
- 1/2 cup sour cream
- 2 tsp salt & pepper
- 2 cups shredded cheese divided
Instructions
- Preheat oven to 375 degrees.
- In a large bowl combine all ingredients together. Reserve 1 cup of cheese.
- Add combined ingredients into a 9x13 inch baking dish. Top with remaining cheese.
- Bake 30 minutes. Broil for 1-2 minutes if desired for browning. Let cool 15 minutes before serving.
