Part cookie, part brownie — who doesn’t love blondies?

The best part is that they’re ridiculously easy to make: they have less ingredients than traditional cookies(you don’t have to roll the dough into balls)

 

And they are easier than brownies ,because there’s no chocolate to melt. This version made with white chocolate chips and pecans I have altered to make low carb friendly!

What’s the difference between brownies and blondies?

The difference between brownies and blondies is mainly the color and one ingredient, which is chocolate.

 

Chocolate is used in a melted format in the brownie recipes, while white chocolate chips is added to the blondie recipe without melting them.

 

Technically, blondies and brownies are both classified as ‘cookie bars’. That is, they are softer than cookies, but tougher than a cake.

 

Both of these delicious confections are prepared in almost the same way, and baked, cut and presented in the same manner.

Fun Fact:

Blondies actually existed before brownies. They date from the late nineteenth century, and brownies were not developed until 1905!

 

A few tips and tricks:

I recommend using parchment for easy baking, non sticking and removal.

 

I love my butter roasted pecans, and they really kick the flavor up in these blondies.

I used white chocolate chips, but any flavor chips would be delicious….

I apparently had never had a Pecan Blondie of any sorts in my entire life.  I honestly feel like I’ve been missing out.  These were great, fluffy, moist, the perfect amount of sweetness and really easy to make.  The videos take a long time because Sarah’s explaining steps, but if you were just making these at home, I think you could whip up the dough in about 10 minutes.  These are definitely on my list of favorite Keto desserts. I encourage you to try them, the whole family will love them.

Keto Pecan Blondies

Instructions

  • Preheat oven to 350 degrees. Line a 9x13 inch baking dish with parchment paper.
  • Cream softened butter and brown sweetener together until light and fluffy.
  • Mix in eggs, vanilla, salt and continue until mixture is well combined.
  • Add flour and baking soda, in halves, until just incorporated. Do not overmix.
  • Fold in by hand chips and nuts.
  • Spread into prepared baking dish. Bake 25 to 35 minutes or until lightly brown and just set in the center.
  • Let cool and slice into bars.
