Keto Pecan Sandies
These easy Pecan Sandies are melt-in-your-mouth shortbread cookies that are bursting with the aroma of real butter and roasted pecans.
We keep these pecan cookies deliciously simple with only 4 ingredients.
Often, pecan sandies contain white sugar, baking powder, or eggs. This recipe includes none of those.
Instead, these deliciously simple melt-in-your-mouth sandies are based on our forever favorite shortbread crust that I use for most of my pies and cheesecakes.
We simply added roasted pecans to the mix and transformed these dreamy shortbread cookies into a low carb holiday favorite, that help keep Santa able to squeeze down those chimneys!
Finely chopped roasted pecans give these shortbread cookies the nutty aroma characteristic of pecan sandies cookies.
Reserve some for sprinkling on top of the cookies, or opt for seasonal snowballs dusted with powdered natural sweetener.
A few tips and tricks:
Line baking sheets with parchment paper or silicone baking mats.
I use my mats for all cookie baking adventures, and they never disappoint.
If you like vanilla flavor in your shortbread, feel free to add 1 tsp of pure vanilla extract into your dough.
A bit of almond extract is delicious is what I used, I love the amaretto flavor this time of year.
Try add-ins such as chocolate chips, white chocolate, dried cranberries, or colorful sprinkles. There are lots of no sugar options these days.
CJ’s FOLLOW UP TASTE TEST:
This little cookies were the perfect bite. They are super large so they hit the spot to conquer those little sweet cravings. It’s always interesting that people on YouTube often get upset when I say to Sarah “this was simple to make…” Often they are upset because, they often feel like I’m saying this was simple and that I’m not doing any of the work related to the actually preparation of the recipe. Which is actually correct. I’m not actually cooking any of the food. However, I am there next to Sarah filming, and directing the shooting of the actually video and the videos always take longer to film and edit than most of dishes we make. When we started CjsKetoKitchen or should I say when Sarah got involved with CjsKetoKitchen there was another YouTuber called the “T-man” who was chronicling his keto weight loss journey on YouTube. The “T-man” was single and really didn’t know how to cook…so I would tell Sarah to make sure she explained the recipe so that even the “T-man” could have success with the recipes. That is where the comment “this was easy/simple to make” comes from it’s all about ensuring that everyone who attempts one of our recipes has a chance to have success when making it. Sarah, does not like showing mistakes on videos or when something doesn’t go perfectly, for example the recent “Turkey Pot Pie” video and the issue with the crust. The reason that was left in the video was because I wanted to make sure the viewer knew what to do when of if they ran into issues with the crust. We really do want you to succeed on Keto and succeed when you make .

Keto Pecan Sandies
Equipment
- silicone mat parchment paper
- 2 TB cookie scoop
Ingredients
- 1/2 cup butter softened
- 1/2 cup powdered natural sweetener
- 2 cups almond flour
- 1/2 tsp salt
- 1 tsp almond extract
- 1/2 cup pecans chopped
Instructions
- Preheat oven to 350 degrees.
- Line a baking sheet with a silicone mat or parchment paper.
- Cream butter and powdered natural sweetener with a hand mixer until light and fluffy.
- Add in almond flour, salt, and extracts. Mixture will be crumbly.
- Fold in chopped pecans by hand. Using a 2TB cookie baller, scoop dough and place about 2 inches apart on baking sheet.
- Flatten slightly with your hand. Bake 10 to 13 minutes or until just lightly brown. Let cool completely on tray before removing.
- Store in tight container for up to 7 days.
