Tacos… Do they really ever get old? I don’t think so! You know how I feel about casseroles. They have so much appeal. They’re warm, comforting, easy to throw together, and feed a crowd. If you like taco flavors and have ground beef laying around like I always seem to ,LOL ,chances are that you will like this taco casserole, and so will your family. I can definitely imagine this one being popular with the kiddos.

This casserole is quite forgiving and easily customizable depending on your taco topping preferences.

This taco casserole includes layers of zesty ground beef, flavorful seasoned cauliflower rice and gooey cheese, for a wholesome and satisfying meal that you will all enjoy. You can never go wrong with taco night!

I never hear hear whining or complaining when tacos are on the menu… So it’s always a good idea to have taco inspired recipes to shake up the classic dinner.

In general, a “casserole” is any food that is cooked and served in the same dish… Casseroles typically include three main ingredients:

A base that provides the main flavor and texture of the dish( in this case beef)

An extender that helps to thicken the dish(here it’s the cauliflower rice)

And a binder( here it’s the cheese)

So we have checked all the boxes, and then thrown in some extra goodies with vegetables and creamy sour cream!

So if you’re looking for an easy and tasty dinner idea this is the one for you. Let’s take a look at our ingredients

Ground beef:

You can honestly use whatever meat you enjoy with your Mexican food.

Cauliflower rice:

The store I went to did not have fresh cauliflower rice so I went with frozen, which is totally acceptable. Just make sure that you’re getting a product that only has cauliflower and no other ingredients.

Cheese:

You can use any kind of cheese that you like, many companies make a Mexican blend of soft white and yellow cheeses… I used cheddar because that is what we had a plentiful amount of.

Veggies:

Knowing how many and what kind, will factor into your finished total carb amount. So definitely use vegetables that you enjoy the flavor of and that are readily available to you and your family. I used a little bit of fresh tomatoes, chopped cilantro, scallions(green onion) Black olives and iceberg shredded lettuce. Because this made multiple servings for multiple people it keeps the carbs low. But if you would like to lower them even further you could cut out a few of these vegetables.

It should be noted because this is a layered casserole covered with cool chopped fresh ingredients, it’s best if it is eaten in one sitting. If you intend on using it for leftovers,it’s best if you keep the baked areas of the casserole separate from the shredded fresh ingredients and add them when it’s time for serving.

I was pleasantly surprised at how well this Keto Taco Casserole turned out.   I mean it was really good!  Like a WOW!  Sarah had never made this before and it’s a modified non-keto recipe.  The addition of the cauliflower rice gives in a nice textural contrast, I just wish that cauliflower would get crunchy like rice, but it can’t and doesn’t.  We ate this right after we were done shooting the video for YouTube and Facebook, and our 12 year old loved it!  This casserole really does capture the flavor of Tacos.  So we had to dress our Taco casserole up with all of the toppings for the purposes of taking photos.  However, once you top if with the cold ingredients it makes it difficult to reheat.  I’m sure that when we make this in the future we will add the toppings to our individuals plates instead of the entire casserole. This was an easy to make casserole, and your family will enjoy it!

Ingredients

Ingredients

  • 2 lbs ground beef we used beef
  • 10 oz. riced cauliflower
  • 1/2 cup water
  • 3 cups cheddar cheese shredded
  • 3 TB taco seasoning divided
  • 1 cup sour cream
  • 2 green onion diced
  • 1/2 pint tomato diced fresh
  • 2 TB cilantro diced
  • 2.25 oz chopped black olive
  • Shredded lettuce (To Taste)

Instructions

  • Instructions
  • Preheat oven to 350ºF
  • Pan fry the cauliflower rice in oil over medium/high heat until browned.Add seasoning.Transfer to 2qt casserole dish and spread in an even layer.
  • Brown ground beef over medium/high heat. Drain excess fat if necessary then add taco seasoning, and water. Stir and cook until liquid absorbs. Add chopped cilantro Transfer to casserole dish in an even layer on top of cauliflower rice.
  • Top with shredded cheese and bake for 10-15 minutes.
  • Spread sour cream over the top. Sprinkle with extra shredded cheese and preferred toppings.
