Meatloaf is one of those classic comfort foods that many of us grew up enjoying!

I remember that I loved when my Grandma would make meatloaf as a child.  This is a Keto Low Carb friendly version of this classic dish. If you ask my children, what their favorite food is that I make, this would be it!

We originally did this YouTube video way back in 2017 when we first started our keto journey, and it was dishes like this that have helped us have success on Keto and be able to adopted it as a lifestyle.

Variety is important when your doing any type of weight loss effort, and Keto is no different.  This is a delicious keto take on a traditional and classic American comfort food.

We’ve made several versions of this recipe.  We’ve done the classic meatloaf style using a loaf pan, but we’ve also made meatloaf muffins.

I personally prefer the traditional loaf version but the meatloaf muffins are a bit more portable especially for lunches.  We substitute the traditional bread crumbs with pork rinds and almond flour. This comes in a 3 net carbs per serving.

You might be thinking what about the ketchup topping, well we got that covered by using no sugar added ketchup that you can purchase at your local grocery stores, mixed with a brown sugar substitute.

Doing Keto doesn’t have to be hard or boring.  Recipes like this can help you make it from one week to the next.  Most of the time we keep our keto eating fairly simple.  Basically just a meat, veggies and fat but we do mix in recipes such as this one to spice things up.

Speaking of spicing things up.  Adding bacon crumbles might be a nice addition to this recipe – bacon make everything taste better. Also adding cheese would be good.

Air Fryer:

It’s true, I had a special bond with “Big Red”, my air fryer. We’ve had been hanging out and having good times for two years now. Lol.

Unfortunately, He was recalled. I participated in the Cosori recall, and received a shiny new black version. I love using an air fryer. However, this recipe can easily be done in your oven.

I would bake at 375 degrees for approximately 30 to 40 minutes, or until your meat thermometer reads 165 degrees.

  • Preheat air fryer to 380 degrees.
  • Combine all ingredients into your ground meats.
  • Form into 2 loaves.
  • Cook in your air fryer approximately 30 minutes or longer until 165 degrees on your meat thermometer.
  • Coat with optional glaze. Cook 2 additional minutes.
