You can use any meat, or veggies you enjoy. Buy, I definitely recommend giving chorizo a try. It’s a fantastic paprika spiced sausage, and it’s very affordable!
I like serving mine topped with sour cream and pickled jalapeños! MMMMmmmm delicious!

Keto Chorizo Mexican Breakfast Casserole
Ingredients
- 9 oz ground chorizo beef or pork, cooked
- 10 eggs room temp.
- 1/4 cup heavy cream
- 1/2 cup pepper blend
- 1 can green chilies diced
- 3 TB cilantro chopped
- 8 oz pepper jack cheese shredded: or other cheese
- 1/2 TB salt and pepper
Instructions
- Preheat oven to 375 degrees. Cook the chorizo. Set aside. Grease a 9x13 inch baking dish.
- Spread the chorizo, pepper blend, chilies, and cheese on the bottom of your baking dish.
- In a blender, mix eggs, heavy cream and salt & pepper. Blend briefly.
- Pour egg mixture over meat/pepper/cheese mixture.
- Bake 25 to 30 minutes, or until eggs are set. Let cool. Serve with Mexican toppings if desired.
