This star ingredients adds a savory, subtly spicy flavor with a terrific bite. This  breakfast casserole is also loaded with wholesome veggies for added nutrition, so it’s a great way to start your day.

You can use any meat, or veggies you enjoy. Buy, I definitely recommend giving chorizo a try. It’s a fantastic paprika spiced sausage, and it’s very affordable!

I like serving mine topped with sour cream and pickled jalapeños! MMMMmmmm delicious!

Keto Chorizo Mexican Breakfast Casserole

Ingredients

  • 9 oz ground chorizo beef or pork, cooked
  • 10 eggs room temp.
  • 1/4 cup heavy cream
  • 1/2 cup pepper blend
  • 1 can green chilies diced
  • 3 TB cilantro chopped
  • 8 oz pepper jack cheese shredded: or other cheese
  • 1/2 TB salt and pepper

Instructions

  • Preheat oven to 375 degrees. Cook the chorizo. Set aside. Grease a 9x13 inch baking dish.
  • Spread the chorizo, pepper blend, chilies, and cheese on the bottom of your baking dish.
  • In a blender, mix eggs, heavy cream and salt & pepper. Blend briefly.
  • Pour egg mixture over meat/pepper/cheese mixture.
  • Bake 25 to 30 minutes, or until eggs are set. Let cool. Serve with Mexican toppings if desired.
