Keto Italian Stuffed Peppers Casserole
Ingredients
- 2 lbs ground beef or any ground meat; cooked
- 1 1/2 bell peppers any color; chopped
- 1/4 cup onion chopped
- 12 oz riced cauliflower
- 14 oz fire roasted tomatoes drained
- 2 cups Italian cheese grated
- 2 TB Italian seasoning
- 1 tsp pesto
Instructions
- Preheat oven to 375 degrees.
- Cook ground meat. Add onion, cauliflower, and pepper slices to cooked met. Saute briefly to soften.
- Add seasoning tomatoes and pesto. Remove to a baking dish. Add in cheese. Combine well.
- Bake uncovered for 30 minutes until slightly golden and bubbly. Let sit 15 minutes before serving.
