Keto No-bake Peanut Butter & Jelly Bars
Salty peanut butter bars floating in a pool of sweet strawberry jam make these Peanut Butter and Jelly Bars a memorable treat.
As the summer progresses, and temperature rise, it’s nice to have a few no bake treats on rotation.
If you’re looking for simple weekend no baking treat or great after school snack, try this simple recipe and thrill your whole family.
The flavor of these peanut butter and jelly bars is about as close as you can get to a peanut butter and jelly sandwich, without the bread.
Without a doubt, these one pan bars will be a new potluck favorite.
There is something so comforting about peanut butter and jelly. The classic peanut butter and jelly sandwich is a combination of three foods that have been around for a long time!
These peanut butter and jelly bars give you the same flavors as the classic sandwich in a bar form.
Ingredient notes:
Peanut Butter: I’ve used both creamy and crunchy peanut butter in this recipe.
You could definitely stick to using all of one or the other per your preference, just remember to look for no sugar added peanut butter
Preserves: Strawberry preserves are spread in between the layers of peanut butter bar batter.
You could use sugar-free jelly or jam. And, of course, use your favorite flavor! I used my own homemade jam recipe. It’s linked here at the bottom of the page!
Maple syrup: I used choc zero, but any sugar free maple syrup will work great!
Peanuts or chips: peanuts or peanut butter chips, top the bars for a little extra crunch in every bite.
You could leave those off if there is enough nuttiness in the bars for you already.

These no bake bars were easy to make and a nice treat, and it was nice not to heat up the house. They are rich and delicious and great with coffee or almond milk. We hope you enjoy them.

Keto No-Bake Peanut Butter & Jelly Bars
Ingredients
- 3 cups almond flour
- 1/3 cup powdered natural sweetener
- 1/2 tbsp salt
- 3/4 cup natural peanut butter
- 4 TB sugar free maple syrup
- 2 TB water as needed for mixing dough
- 1/2 cup sugar free jam
- 1/4 cup roasted peanuts chopped; optional
- 1/4 cup sugar free peanut butter chips chopped; optional
Instructions
- In a bowl mix together all of your dry ingredients.
- Add the peanut butter, maple syrup and necessary water to form a dough.
- Line a small baking dish(mine was 9x6) with parchment paper. Press half of the dough in an even layer on the bottom.
- Top this layer with jam. I used my homemade jam(recipe below). Spread evenly.
- Using parchment paper roll out remaining dough. Top, fully covering the jelly layer.
- Refrigerate at least 2 or 3 hours. Remove from dish and cut into even squares.
