Keto Sloppy Joe Casserole
Well you already know how I feel about casseroles…
Fall is wonderful, So full of crisp beautiful colors. I love it. Mostly because it means that I can bust out all of my favorite recipes that require cranking up the oven. Nobody likes a hot oven in summer. Lol.
What is it about this time of year that makes me want to throw open my windows, decorate with pumpkins, and start baking all manner of casseroles and comfort foods?
What is a Sloppy Joe?
Okay, if you don’t already know what a sloppy joe, is I feel very sad that you’ve been missing out on them your whole life! Here goes: a sloppy joe is traditionally known as a sandwich made of ground beef that’s seasoned and tossed in a tomato sauce with onions, peppers and other spices.
They used to make them for school lunch all the time when I was in elementary. Of course on the ketogenic lifestyle it’s been a while since I have indulged in this childhood favorite.
The origin of the sloppy joe seems to date back to a restaurant in Sioux Falls, Iowa where a cook named Joe sold “loose meat sandwiches” which eventually were called sloppy joes….but, it was really made popular in the 1960’s when Manwich brand put out a canned sloppy joe sauce.
So as I stated before… sandwiches aren’t necessarily a ketogenic food.. so I set out to create a casserole that would mimic the flavors but that would still keep things low carb.

Well Sarah did it again. The Casserole Queen Strikes Back…sounds like a movie title! This was delicious, not sure why I was surprised. I did not grow up eating sloppy joe’s, I don’t think I had a sloppy joe until I went into the military. But I do enjoy them, so this is a nice recipe to have. Super easy, delicious, very family friendly as well. Don’t be intimidated by the biscuits they really are easy to make. We really didn’t have any of this left over because it was devoured fairly quickly. Enjoy!

Keto Sloppy Joe Casserole
Ingredients
sloppy joe mixture
- 1 1/2 lbs ground beef cooked
- 1/4 onion chopped
- 1/2 green bell pepper chopped
- 1 cup water
- 3/4 cup ketchup no sugar added
- 2 TB brown sugar alternative sweetener
- 1 tsp Dijon mustard
- 2 tsp Worcestershire sauce
- 1 pinch cayenne pepper optional
- 2 cloves garlic
spoon biscuit topping:
- 1 1/2 cup almond flour
- 1 1/2 tsp baking powder
- 1/4 cup heavy cream
- 3 TB butter cold, cubed
- 1 egg
- 1/2 cup cheese shredded
- 2 tsp garlic powder
Instructions
Sloppy Joe mixture:
- Preheat oven to 350 degrees.
- Brown ground beef. Add onion and green pepper. Sauté briefly.
- Add remaining ingredients. Cover and let simmer while preparing biscuits.
spoon biscuit topping:
- Whisk dry ingredients together well, sifting with fork as needed.
- Cut(mash)butter into dry ingredients using fingers, forks, or a pastry blender, until sandy in texture.
- Form a well in the center. Add egg and cream. Whisk together.
- Combine into dry ingredients being careful not to overwork it. Add cheese. Stir briefly.
- Place sloppy Joe mixture into a 8x11 inch casserole dish.
- Drop biscuits by spoonful over the casserole.
- Bake at 350 degrees for 25 minutes or until biscuits are golden.
