That’s right – just TWO ingredients! It’s why You could call ’em lazy meatballs. But you know what? You’d never know it.
You’d think I slaved over them for hours.

They’re tasty, moist and perfect over some riced cauliflower or spaghetti zoodles.

 

The secret to these meatballs is NOT to use lean ground beef. The extra fat keeps the meatballs moist, so you don’t need to add anything else to them.

The minimal handling of the meat as well as the small size of the meatballs also contribute to their tenderness.

This is Amaze-BALLS of a recipe! Seriously yummy in the tummy and such a time saver in the weekday rush. Also an amazing leftover remake because you can freeze the leftovers and pull it out and have an instant trip to Italy for your taste buds.

The Ground Meat
You can use any ground meat or mix of ground meat you like. My personal favorite is a blend of ground beef and pork, but good old fatty beef is awesome!

I’ve also done just ground turkey and just pork. Ground lamb, turkey, chicken, veal, or buffalo would also be awesome.

Keep in mind that the fattier the meat you use, the more tender your meatballs!

CJ’S FOLLOW-UP TASTE TEST

These little meatballs were great.  So easy to make our kids could do it! They really enjoyed these also.  We made these because of our month long trial of the BBB&E extreme carnivore plan.  This plan is strict and a bit tough, but we made it through the first week.  It’s ok, to do hard things it helps us grow and change.

Zero Carb Carnivore Meatballs

Ingredients

  • 2 lb ground beef 80/20, not lean
  • 2 eggs large; beaten
  • 1 TB coarse salt
  • 1 TB coarse ground pepper

Instructions

  • Preheat oven to 350 degrees
  • In a large bowl combine beef, beaten egg and seasoning.
  • Using a 1 or 2 TB cookie scoop or spoon, portion out meatballs.
  • Place on a large baking sheet. Bake 30 minutes.
